The recommendation for day-old rice is a very useful one. I make mine the night before and put it spread out on a baking tray in my fridge, which is the kind that has ventilation to keep condensation down. It basically takes the moisture out of the air and helps to dry the cooked rice. By the next evening, it is perfect for fried rice.

I also spread my rice on a tray overnight in the fridge, but if I haven’t planned ahead I cook my rice same day, spread on a tray and pop it into the freezer 15-20 min this method also works perfectly. I learnt this little tip from Marion Grasby off Marion’s Kitchen 😊
