I've cooked chucks like this (same ingredients) for years EXCEPT for one MAJOR change. Instead of salting immediately before searing, 'DRY BRINE' your roast. If you're not familiar with the process it's very easy and the flavor enhancement by something this simple will blow you away. You'll need a small sheet pan or skillet with a wire rack. Evenly salt both sides and the edges of the roast (or steak), place it on the rack and put in fridge UNCOVERED for a few hours hrs (minimum) or overnight. For dry brining beef, one tsp of Morton's Kosher Salt salt per pound is what is recommended, (or 3/4 tsp of table salt per pound). At first it will get very wet as the salt draws out juices from the meat, but after a few hours it begins to look 'normal' as the juices go back in taking the salt with it. After several hours it will be dry to the touch and there will be but a few drops, if any, of juice in the pan. Pat dry any wet spots, add your pepper and sear. DO NOT SALT IT. It will not taste salty, but you will definitely notice the flavor, not to mention the tenderness and juiciness.

Yes the 4 inch is great for a fried egg to make a breakfast samich. I use the 18 incher to make homemade pan pizza in the oven. I also have a waffle iron, so you can make waffles over a campfire. I have a Dutch Oven to make stew, chili, and even peach cobbler when Horse camping!

Love the note on your fridge, “Are you really hungry?” I'm a new Carnivore, I don't feel as hungry as I once did. Sometimes I forget that I did not eat. I've incorporated intermittent fasting into my journey, and have so much energy. I walk each day and I feel great. I've lost a lot of weight. In the beginning, it did not show. Two and a half months Carnivore, fasting and doing Omad and NOTHING!!!!! I was feeling so sad, but each morning I got up and went walking and ate only meat. And, then--I'm melting away and I'm loving it.

To add another dimension to it, shred the roast, place on a baking sheet and put a tad of the au jus sprinkle on top. Broil 2-3 minutes, adds an EXCELLENT crunch to the meat 🥰🥰🤤

I stocked up on chuck roasts when Ingle's had them for $3.98lb. last week! This is the same way I do mine with the only exception that I add 1/2 stick of butter right on top of the roast before it goes in the oven!! Makes that au jus even richer and creamer. I made this Sunday for my wife and my in-laws. I added some carrots and potatoes for the non-carnivores. It was absolutely amazing! You weren’t kidding about the Anjou, it is literal crack for meat. I have heard of some people not losing in the beginning while their body adjust and heals. I started keto first for a few months and lost water weight at first then I was losing about a pound a week or staying the same so then I cut out cheese, almonds and keto creamer and was considered eating carnivore and then I started to more rapidly lose weight. I'm a 46 year old female so it's been slow going this time around compared to my younger days 😂.

@@generaljane7643 You will lost 5- 10 pounds or so of water weight in the first week. If someone didn't drop 5 pounds they have to be eating carbs. I'm 50 and I lose 2-3 pounds a week. I'm actually trying to slow down the rate I lose. I had 50 to lose and 20 more to go.

Congratulations on finding a delicious way to get healthy! I tried to be a vegetarian, and was always hungry, Finally, my one knee just gave up! (Mind you, I was Not losing weight!) My cousin said, we are Scottish, our heritage is we eat meat. So, Went back to eating meat, now I am healthier and happier, the knee works fin. I walk just fine again. Last week, I made Stifado, a Greek Stew using chuck roast. 3 min sear on each side, sauteed shallots red onion and garlic. Tomato paste, tomato sauce, and 2 cups beef broth. Thyme, bay leaf, 280° for 4 hours. I was able to pull the roast apart with 2 forks very easily. Very low carb and delicious 😋

Perfect! Braising is the way to go. I brown all sides in a cast iron pan, but transfer beef & liquid to a preheated Dutch oven for more depth . The last 45 - 60 minutes, I put in long raw carrots and quartered red potatoes.

I cube mine, too get more if the braising per square inch. Andrew i leave it uncovered for 1/2 the cooking time to concentrate the beef broth. Love it. Hope you enjoy the results. I’ve lost over 50 lbs, zero on my cardiac calcium score, lab work looks better than it has in 20 yrs. I’m 56yrs old

Best to make sure the water is hot before you add it. Even letting the skillet sit for a couple of minutes, it's still really hot. A fast temperature change could crack the cast iron.

I could never make a tender chuck roast or any other kind of roast. They all came out like seasoned leather!!! I saw your recipe and tried it in my dutch oven. It came out good but I kept practicing and watched your techniques over and over. My fiancé knew I was serious about making really tender chuck roasts so he bought me an iron skillet (it was pre-seasoned!) and that did the the trick of making the perfect, tender roast that falls apart when you're trying to transfer it to a serving platter! I want to thank you so much for helping me to FINALLY cook a perfect roast with Yukon gold roast potatoes, Yorkshire Pudding, honey buttered carrots, and buttery brussel sprouts!!!🎉🎊👍👍👍😍

Add some beef broth to it rather than just water, I also add garlic and onion powder to the meat with salt and pepper then mushrooms a little butter too. I use my cast iron dutch oven works better.

I followed your video two or three times in my cast iron Dutch Oven and once yesterday in my cast iron skillet. With the Dutch Oven I made it to take to lunch after church. I took it from my oven and packed it with insulation and towels and it was still hot when we opened it at my friend’s house. Every time I’ve made it to share like that everyone loves it! I made a small one last night and had a lite supper, lunch today with it and green beans and I have another serving of each for another meal today - if I get hungry again. Your method is now my tried and true!! Thank you! And congratulations on your journey, Cassie🎉! I saw your “five myths about carnivore” video. You have done well 😅.

I just popped this in the oven for the first time and my husband came out from the office, wanting to know when it's going to be ready? LOL! OMG Cassie, SO good! I do have to admit making a couple tweaks because we do ketovore - so I added maybe 1/3 of a small onion, cut in chunks, and 3 cloves of garlic, a couple twigs of rosemary from my garden. Did everything else the way you did. 2 hours 45 minutes later, we were gnashing our teeth to get into it, but let it cool a few minutes and it just pulled right apart. AMAZING to get that much flavor out of a pot roast. I told DH we'll be doing that weekly during the winter at least! Thank you again. What a winner that one is! @@CarnivoreQuest

Just ran across this and going to try it. I do know though that I will not cook on new cast iron. I have old 50 and 60-year-old cast iron maybe even older. The new ones that say made in Taiwan or wherever even USA just don't have a good taste to them. Anyway use the old Griswold or Wagner cast iron and you'll be amazed at the difference in taste

I made this on 12/10/23 and it came out amazing. Mike husband loved it. I only have a small cast iron so I used my William Sonoma pan and had a pizza pan with holes in it (had to cover it with foil). I will be making this again soon. Oh and had just bought the pink salt which added such a different flavor than table. Thank you for sharing.

Made this today. My 10 inch cast iron skillet was a bit small for a 3 pound chuck roast so I used 1 1/2 cups water and put a rimmed baking pan in the oven under the skillet. Heavy duty foil on top. A delicious carnivore meal!!

It’s my second time making it (got chuck roast at Costco) and making it for our dinner & lunches for work. My husband and I are both trying to eat healthier and lose weight. Definitely going to make this, thank you. I use my cast iron a lot and I like a silicone handle cover that Amazon sells. It is sold by Lodge and fits over extended handle, also have one for handle on opposite side. I leave it on entire time while stove top cooking and remove when pan goes into oven🌞

I made this! Turned out so delicious! Superbly! I had to add more water half way through and more after I took out the roast and shredded it. However, I added a quarter tsp of xanthan gum to 2 cups of water after deglazing the pan then whisked it for a couple minutes and made the most delicious thick gravy and added the roast back in the skillet and stirred the meat through the thick gravy! Absolutely bomb! Spectacular! Thank you for this. A weekly must!

I make Mississippi pot roast with a chuck roast. A packet of hidden valley dry dip or salad dressing, a packet of dry onion soup mix, a packet of au Jus. I put cloves of garlic in my roast. Sometimes I add small red potatoes, onions, baby carrots and turn it into a stew. I use a crockpot. It is my family's favorite!!😊

Braising tougher cut it a terrific way to cook. Your Chuck looked great. You both look great. I love ox tail and beef shanks braised. I braise on the pellet grill in summer to avoid heating our house.

Hi Cassie. Looks delicious! My Italian mom was an excellent cook. She used to make chuck steak pizzaiola. It was slow cooked very similar to yours, but in a tomato base. Will definitely make your version when the temps drop. My mouth is watering!😋

@@CarnivoreQuest It was soooo good. You basically do the same to start. Brown the beef on all sides. Then add the tomatoes, a little bit of water and some garlic and basil. Then slowly cook covered. When the meat is fork tender, throw in a can of peas. Let the peas simmer for a few minutes & serve. Mom cooked hers in this huge stainless steel skillet on top of a gas stove.

Wow. I'm doing my second roast this way, right now. First one was delish and I am REALLY looking forward to this one. I love you Cassie. You're so freaking real. I do something similar when I cook food on a sheet pan. I take another sheet pan and cover it like a lid. I usually make my roast like you but the oven heats up my house too much so we switch to the crockpot for now.

Pretty awesome! My go-to: dice the chuck roast into 1.0 to 1.5 inch squares, salt and pepper, cook/sear it in that cast iron "screaming dot" pan. Very quick (5 to 10 minutes - maybe less) and "to die for" - bon appetite~

My mom still does and I do too. But we use a small dutch oven pot( black iron pot of course). Summer time she'd cook at night. In the morning good gravy for biscuits and sandwiches the rest of the day. There was never enough for sandwiches. So good, thanks.
