@Bruno - I think she's suggesting using canned coconut milk instead of regular milk with the cake mix before baking to infuse even more coconut flavor to the cake itself. But if anyone has tried that Coco Lopez cream of coconut before it is MUCH more strongly coconut flavored than regular coconut milk. It is most often used for those super coconutty mixed drinks like pina coladas. It's intense. So having that all through the middle of the cake through the fork holes is plenty. I made another very similar coconut cake with this Coco Lopez before (for a Moana-themed birthday for my little girl) and it was the most coconut-flavored, moist delicious thing! I had forgotten about it until seeing her open the can in this video! We'll be making this version tomorrow. 🙂

That looks delicious, I'm gonna make it in a couple days for company. I don't ever use cool whip anymore I make my own with cream. Sooo much better for you and much tastier. My family loves it.

For me it would definitely be toasted coconut! I'm with the husband on this and raw coconut would ruin the cake for me!

This is a fabulous cake! I almost never use cake mix, I think they taste fake. But in this recipe, cake mix tastes like heaven! Add a little vanilla extract to help boost the natural flavor, and use melted butter like Catherine does in the video. I also never use cool whip - only natural whipped cream, please! - except in this cake. It is so easy, holds up well in the fridge, and tastes divine! If you like coconut, this cake will be a crowd pleaser.

Have you tried Trader Joe's vanilla cake mix? It doesn't have that fake taste. Also, if you do use a cake mix, always substitute butter for oil and milk or half and half for water and it makes a big difference! Agree about never using cool whip, but I see how this would work for a lot of people just trying to whip out a dessert for friends and family!

I have made this for a long time but I add a can of crush pinapple after the cream of coconut and before icing. It make a delicious pineapple coconut cake. You must try it.

Just found this video. I love coconut. My Dad was in the South PACIFIC during WWII. He had never eaten coconut and his first introduction was ripened on the tree. He bought us fresh coconut every year. I cannot wait to make this.

Hi Katherine! I've made a similar recipe for years and it's ALWAYS a hit. For extra coconut flavor I add a little coconut extract into the cake batter. I love this recipe so much! 🥥☕🧡

I actually rake the top crust completely off w a fork so that the liquids and toppings soak in Faster .. I also add a block of cream cheese to my cool whip and mix together... 🥰 its pretty amazing 😉✌ And I will use your tweets in the future !!) Looks delish !!)P. Thanks for sharing your recipe 😀👌

@Theresa Baranski you def can add Powdered sugar.. but the cool whip has nought in it or me.. I've also added sweetened condensed milk. That is also great... honestly it can be tweeked about aNY way you want.. but I always make it 2 days ahead.. it sooo much richer and mouser if you can wait. Everything just melds together and it's just intense..

The only thing I would do differently is I would mix about some of the coconut into the CoolWhip Topping prior to putting it on the cake. Then cover the cake with more coconut. But I can't wait to try this as it sounds delicious! I may make for my mom's birthday.

I love coconut i grow up eating coco every week i come from Puerto Rico 🇵🇷 we have 2 coco palms 🌴 in our back yard and my father used to go up to get the coco the young coco are delicious i miss those days😢😢😢😢

I love this cake. It tastes even better the next day after sitting in the fridge. We sometimes put crushed pineapple on top and call it a pina colada cake.

I've been making this for at least 40 years and the Cream of Coconut has always been in the liquor aisle at my Walmart and the grocery stores I used to buy it from. I already planned last week to make it for the missionaries. I had to laugh when this popped up on KZbin tonight.

I made this cake and oh my goodness, it was one of the best cakes ive ever put in my mouth! Only thing I did different was, i used coconut milk but man was it good!!! I also added walnuts to my batter AND on top of the cake under the coconut.

Variations and results! Background: I am a huge coconut fan and especially when it comes to coconut cake and coconut cream pie! My mother and grandmother used to make me both when I was a kid in elementary and high school. Today I am 51 and my mother is 87! 🙏We hadn't coconut cake in years and came across this recipe to try! We ended up making it 3 times with some variations each time. 1. We made one just as shown here, and we have never thought of ir used condensed milk. We did use the poke method with a wooden spoon over the fork method. We both found that condensed milk is overpowering, rich, and sweet. It was okay, but it was missing something! 2. Second attempt... same thing cake wise, although I added 1 cup of coconut flakes to my high power, high speed blender to chop very fine. This was then added to the cake batter. Also, I added 1 teaspoon of coconut extract to the batter along with 1 teaspoon of cinnamon, nutmeg, and allspice. As for the topping, we used 1 teaspoon of coconut extract to the can of coconut milk and can of condensed milk. It's was much better, but the condensed milk is overpowering. 3. Attempt 3: Batter a as prepared as above with butter instead or oil, milk instead of water, 1 teaspoon of coconut,1 cup of finely shredded coconut to the mix as well as 1 teaspoon cinnamon, nutmeg, allspice and ginger. Love spices! Topping used 1 1/2 cans coconut milk and 1/2 can of condensed milk and topped with cool whip and 1 cup coconut flakes. We liked version 3, the best, and the condensed milk was not as Iverson bearing and rich. Far far better, especially if you are a coconut lover like us! We are coconut-ed out at the moment, but in the near future, I do plan to try our version 3, but with a chocolate cake mmic! Hope this gives everyone some ideas how you can adjust to your taste likes and flavors!!!

Perhaps if you would prepare the cake using the tines of a fork instead of the wooden spoon the condensed milk might not be too overpowering. Just a thought. But thanks for your feedback so I won't use the spoon myself. Lol!

Since you like spices just as my family and I do, you may like my 'BUTTER PECAN & FROSTING POUND CAKE' recipe: INGREDIENTS: • 1 box 'SPICE' Cake Mix (OR use BUTTER PECAN OR even a YELLOW cake mix - cake mix Brand does NOT matter) • 4 Eggs (mine are always Jumbo size. Don't know that the size matters. Except Jumbo probably adds more moistness.) • 1 1/2 C Milk (Original Recipe ONLY called for 1 C, (But I misread the cup measurements & the extra 1/2 C = moister cake. So I always go with 1 1/2 C milk!) • 2/3 C Oil - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - • 1 can Rich & Creamy frosting 'Coconut Pecan' (MUST BE *BETTY CROCKER* BRAND!!!) DIRECTIONS: 1. Preheat oven to 325⁰ F. 2. In mixing bowl, add together first 4 ingredients and mix til combined. 3. Add *Betty Crocker* FROSTING to prepared cake mix, mixing only til thoroughly combined & use a spatula to make sure no frosting is lying in bottom of bowl. 4. Heavily coat a bundt pan w/ Non-Stick Spray. 5. Pour cake & frosting mixture into pan. 6. BAKE: 325⁰ TIME: 1 HOUR 7. COOL cake in the bundt pan on a wire rack for 20 MINS. 8. TURN cake out onto a cake plate to finish COOLING. * Most Delicious & Easiest Pound Cake! * Enjoy! Please forgive me if posting this recipe is out of line. ✝️ 🙏 🙌 ❤️ 👏 🙏 ✝️

When I was a kid my mom made Jello cake just like this - she used white cake for this. She always whipped her own icing. It was SO GOOD!! As a kid I absolutely loved it. Sadly my mom is no longer here but she was the best cook ever (I guess I am a little biased) lol

It looks like a snowfall....if the snowfall consisted of a layer of whipped cream and freshly fallen coconut. Oh Yeah! Everyone in my family loved coconut so I grew up eating and loving it. Try using the spray on just the bottom of the pan not the sides. The cake can “climb” easier and will be higher. Use a sharp knife if needed to release when cooled. Works! 🎂🍰

This looks amazing, I love all things coconut! You should keep a few pieces at the end with no flaked coconut for your husband. LOL I used to have to do that with cakes I sprinkled pecans on, because my son hates pecans. I used to work in a bakery, we would use melted butter for richness in cakes unless it was a cake that had to be refrigerated, then we used oil, because butter becomes solid in the fridge and it can make your cake very dense, oil will keep a lighter texture. But, if not refrigerated then definitely use butter for the richness. This cake wouldn't matter since it is a poke cake, but just thought I would throw that information out.

Hi Catherine! Cake looks great! TIP FOR THAT COCONUT…I DON’T LIKE chewing on a “wad” of coconut for what seems like 30 minutes either, but LOVE COCONUT! I run mine thru food process a few pulses to cut it into small pieces! Much easier to eat!!! Sorry missed Dana’s comments!

Catherine: I wanted to let you know that I baked the coconut cake following your directions. My mom got his recipe from someone that called it ‘better than sex cake’! My mom didn’t have your changes to make the cake richer. I did the substitutions per your instructions and it was delicious. Everyone loved my mom’s cake. When she was asked what the name of the recipe was, she would say that it was just a coconut sheet cake.

Super delicious recipe. I love coconut cake and everything that have coconut. The only think I will add here 1-2 tsp Rum inside the mixture of coconut with condensed milk. That will be AWSOME FLAVOR. Then cover like she did.

I have made a coconut poke cake similar to this one. Instead of Coco Lopez, I used milk and frozen coconut, heated, etc and poured into the holes. Top it off with cool whip and another bag of frozen coconut. Oh and I use white cake mix which is so pretty and clean looking especially at Christmas! I am anxious to try this recipe so I can compare. I know the one I have made has won several awards. They are probably very similar. Thx for the video!

Just a note for others - regular coconut milk is nowhere near as intensely coconut-flavored as the Coco Lopez stuff, which is sweet, intense but very natural tasting coconut flavor. It's what makes pina coladas so coconut-ty. Definitely try the recipe as-is first with the Coco Lopez if you can.

Frozen coconut is the BEST -- fresh, intense flavor and much softer than the dried flakes. My mom always used it on her fancy 4-layer coconut cake.

Catherine, I think you hit the nail on this one! I love COCONUT Cake.. It's a family FAVORITE.. and forget about that PEPERAGE farm! ..the way you put together that CAKE looks SIMPLE enough to put together as well. I'm sure that it TASTES 100 times BETTER too! Anyhow, I have a SCRATCH recipe for Cake but with the same idea and METHODS you used .. I'm so excited to find a easier method that's Simple and not so complicated. Appreciate it. This is my husband's favorite cake. I have made it with different flavors of cake mix. Chocolate, strawberry and our new favorite, orange. It was delicious!!! Try putting coconut on half of cake and he will be happy. I did that at Easter for my family, some of them love the flavor, but not the texture. Love your videos.

I LOVE coconut cake!!!! My husband hates the texture of coconut but loves the flavor also. Toasting the coconut that goes on top is good too.

I just Made this a wk ago . I used a white cake mix and used eggs whites and coconut cream plus a can of condensed milk mix with coconut cream not coconut milk my husband went crazy over it. 😜

I made this today and served it for my fathers’ birthday - we all 💟coconut cake and we all agreed that this is BY FAR the BEST coconut cake we have ever had!!!!! It was very essy to make & i used a white cake mix and it looked great! I will try making it with a chocolate cake mix later!!! 💟💟💟💟 everyone who likes coconut will love this cake.

Thank you for the recipe. I changed it a bit. I used a gluten free cake mix box. Then made my own whip cream (so I can control the amount of sugar) and used coconut condense milk instead. It was so good!

U used coconut condensed milk? I’ve never seen that! Is that “sweetened coconut condensed milk”? Or just like u said-coconut condensed milk? And in the store, do u find it on the shelf!! Or perhaps frig. or freezer?? Thank you so much!!

@@foofookachoo1136 yes, it is actual coconut condense milk. It’s not as sweet as regular condense milk. I was able to find it at our local chain store on the shelf.

This recipe looks so AWESOME! Can't wait to try! Although I do LOVE coconut, I also do not like the texture of it... dried anyway. I normally put my coconut in my reg or mini food processor and make the coconut really fine and then sprinkle it on top of whatever I'm using it for. I can eat it that way and it's much better texture wise. :-)

Oh my that's alot of rich . My cake mix called for 3 egg whites 1 cup of water and 1/3 cup of oil . Cook cake 350 for what it says. Then cool for just a few minutes long enough to mix coconut cream and condensed milk pour in holes put in Refrigerator cool put cool whip and cocnut on top and its really good and pretty too .
