Today is my sister's birthday. She is 71. I'm making this coconut cream cake just for her. She loves it and we haven't had it in a long time.

@Bruno - I think she's suggesting using canned coconut milk instead of regular milk with the cake mix before baking to infuse even more coconut flavor to the cake itself. But if anyone has tried that Coco Lopez cream of coconut before it is MUCH more strongly coconut flavored than regular coconut milk. It is most often used for those super coconutty mixed drinks like pina coladas. It's intense. So having that all through the middle of the cake through the fork holes is plenty. I made another very similar coconut cake with this Coco Lopez before (for a Moana-themed birthday for my little girl) and it was the most coconut-flavored, moist delicious thing! I had forgotten about it until seeing her open the can in this video! We'll be making this version tomorrow. 🙂

Just found this video. I love coconut. My Dad was in the South PACIFIC during WWII. He had never eaten coconut and his first introduction was ripened on the tree. He bought us fresh coconut every year. I cannot wait to make this.

I have made this for a long time but I add a can of crush pinapple after the cream of coconut and before icing. It make a delicious pineapple coconut cake. You must try it.

This is a fabulous cake! I almost never use cake mix, I think they taste fake. But in this recipe, cake mix tastes like heaven! Add a little vanilla extract to help boost the natural flavor, and use melted butter like Catherine does in the video. I also never use cool whip - only natural whipped cream, please! - except in this cake. It is so easy, holds up well in the fridge, and tastes divine! If you like coconut, this cake will be a crowd pleaser.

Have you tried Trader Joe's vanilla cake mix? It doesn't have that fake taste. Also, if you do use a cake mix, always substitute butter for oil and milk or half and half for water and it makes a big difference! Agree about never using cool whip, but I see how this would work for a lot of people just trying to whip out a dessert for friends and family!

I made this cake and oh my goodness, it was one of the best cakes ive ever put in my mouth! Only thing I did different was, i used coconut milk but man was it good!!! I also added walnuts to my batter AND on top of the cake under the coconut.

So many recipes call for cheese, but I have a friend who is not crazy about cheese. So when I fix a recipe that calls for a shredded cheese topping I put cheese on half of the dish and substitute buttered bread crumbs on the other half. Now I am not suggesting you put buttered bread crumbs on the cake, but hubby might prefer that you simply not add the coconut to his portion. Today my brother was just talking about wanting a coconut cake. I will definitely have to make your recipe for him. It looks delicious!

Try using the spray on just the bottom of the pan not the sides. The cake can “climb” easier and will be higher. Use a sharp knife if needed to release when cooled. Works! 🎂🍰

When I was a kid my mom made Jello cake just like this - she used white cake for this. She always whipped her own icing. It was SO GOOD!! As a kid I absolutely loved it. Sadly my mom is no longer here but she was the best cook ever (I guess I am a little biased) lol

For those who think they don't like the texture of coconut, use flaked coconut as is used here, instead of shredded. Shredded always feels like I'm eating hair. Flaked is softer, I love it! I will be making this for sure!!

Variations and results! Background: I am a huge coconut fan and especially when it comes to coconut cake and coconut cream pie! My mother and grandmother used to make me both when I was a kid in elementary and high school. Today I am 51 and my mother is 87! 🙏We hadn't coconut cake in years and came across this recipe to try! We ended up making it 3 times with some variations each time. 1. We made one just as shown here, and we have never thought of ir used condensed milk. We did use the poke method with a wooden spoon over the fork method. We both found that condensed milk is overpowering, rich, and sweet. It was okay, but it was missing something! 2. Second attempt... same thing cake wise, although I added 1 cup of coconut flakes to my high power, high speed blender to chop very fine. This was then added to the cake batter. Also, I added 1 teaspoon of coconut extract to the batter along with 1 teaspoon of cinnamon, nutmeg, and allspice. As for the topping, we used 1 teaspoon of coconut extract to the can of coconut milk and can of condensed milk. It's was much better, but the condensed milk is overpowering. 3. Attempt 3: Batter a as prepared as above with butter instead or oil, milk instead of water, 1 teaspoon of coconut,1 cup of finely shredded coconut to the mix as well as 1 teaspoon cinnamon, nutmeg, allspice and ginger. Love spices! Topping used 1 1/2 cans coconut milk and 1/2 can of condensed milk and topped with cool whip and 1 cup coconut flakes. We liked version 3, the best, and the condensed milk was not as Iverson bearing and rich. Far far better, especially if you are a coconut lover like us! We are coconut-ed out at the moment, but in the near future, I do plan to try our version 3, but with a chocolate cake mmic! Hope this gives everyone some ideas how you can adjust to your taste likes and flavors!!!

Perhaps if you would prepare the cake using the tines of a fork instead of the wooden spoon the condensed milk might not be too overpowering. Just a thought. But thanks for your feedback so I won't use the spoon myself. Lol!

Since you like spices just as my family and I do, you may like my 'BUTTER PECAN & FROSTING POUND CAKE' recipe: INGREDIENTS: • 1 box 'SPICE' Cake Mix (OR use BUTTER PECAN OR even a YELLOW cake mix - cake mix Brand does NOT matter) • 4 Eggs (mine are always Jumbo size. Don't know that the size matters. Except Jumbo probably adds more moistness.) • 1 1/2 C Milk (Original Recipe ONLY called for 1 C, (But I misread the cup measurements & the extra 1/2 C = moister cake. So I always go with 1 1/2 C milk!) • 2/3 C Oil - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - • 1 can Rich & Creamy frosting 'Coconut Pecan' (MUST BE *BETTY CROCKER* BRAND!!!) DIRECTIONS: 1. Preheat oven to 325⁰ F. 2. In mixing bowl, add together first 4 ingredients and mix til combined. 3. Add *Betty Crocker* FROSTING to prepared cake mix, mixing only til thoroughly combined & use a spatula to make sure no frosting is lying in bottom of bowl. 4. Heavily coat a bundt pan w/ Non-Stick Spray. 5. Pour cake & frosting mixture into pan. 6. BAKE: 325⁰ TIME: 1 HOUR 7. COOL cake in the bundt pan on a wire rack for 20 MINS. 8. TURN cake out onto a cake plate to finish COOLING. * Most Delicious & Easiest Pound Cake! * Enjoy! Please forgive me if posting this recipe is out of line. ✝️ 🙏 🙌 ❤️ 👏 🙏 ✝️

That is also great... honestly it can be tweeked about aNY way you want.. but I always make it 2 days ahead.. it sooo much richer and mouser if you can wait. This is definitely my favorite cake. I made this cake and it's absolutely delicious. My hubby and I love anything coconut. We never had a delicious coconut cake before. Everyone loved it. The cake is almost gone so now I'll get to make another one. Thank you for sharing your recipe. Keep your videos coming!!!!

I have made this cake years ago and it is wonderful!!! I fine the coco Lopez cream of coconut in the aisle with drink mixes (it is usually used for piña coladas) like seltzer water, club soda, margarita mixes. You can also find it in liquor stores. You really need to make this cake!

Catherine, I think you hit the nail on this one! I love COCONUT Cake.. It's a family FAVORITE.. and forget about that PEPERAGE farm! ..the way you put together that CAKE looks SIMPLE enough to put together as well. I'm sure that it TASTES 100 times BETTER too! Anyhow, I have a SCRATCH recipe for Cake but with the same idea and METHODS you used .. I'm so excited to find a easier method that's Simple and not so complicated. Appreciate it. I am thinking Mounds candy bar as in chocolate cake with your coco lopez and condensed milk. Edited to add, hot fudge topping, spread over cake, then cool whip and coconut.

I haven’t had a coconut cake in a long time I’m trying this one my daughter is allergic to coconut so I stopped making them but now that she’s married with her own family I can start making them again and this one I’m definitely going to make

I have made a coconut poke cake similar to this one. Instead of Coco Lopez, I used milk and frozen coconut, heated, etc and poured into the holes. Top it off with cool whip and another bag of frozen coconut. Oh and I use white cake mix which is so pretty and clean looking especially at Christmas! I am anxious to try this recipe so I can compare. I know the one I have made has won several awards. They are probably very similar. Thx for the video!

Just a note for others - regular coconut milk is nowhere near as intensely coconut-flavored as the Coco Lopez stuff, which is sweet, intense but very natural tasting coconut flavor. It's what makes pina coladas so coconut-ty. Definitely try the recipe as-is first with the Coco Lopez if you can.

Frozen coconut is the BEST -- fresh, intense flavor and much softer than the dried flakes. My mom always used it on her fancy 4-layer coconut cake.
