Easy Costco Rotisserie Chicken Enchiladas

What you will need:
1 Rotisserie Chicken
Flour Tortillas
Shredded Cheese
Choice of Seasoning
1 can each of Red and Green Enchilada Sauce La Victoria or Old El Paso brands
Steps:
1. Shred the chicken
2. If desired, Set chicken skin on parchment lined baking sheet and bake at 400 for 20 minutes, watching not to burn it
3. Heat sauce to a simmer
4. Heat tortillas to become soft and flexible
5. Lightly dip tortillas into sauce on each side.
6. Lay tortilla flat, fill with chicken, cheese, roll, and place on baking sheet
7. Once sheet is filled, top with more cheese, sauce, cover with foil using toothpicks to separate foil from top of enchiladas
8. Bake at 350 until cheese melts and filling is hot
9. Serve and enjoy!

Just a tip for the cheese sticking and melting to the top of your tray. Using foil or a store tray, spray some PAM on the underside! It won't stick or melt and it comes right off! I learned this trick just a few years ago and it works perfect!

Update: made them last night and have already demolished 4 of them. This is genuinely the easiest and best recipe 👏🏼👏🏼👏🏼 only thing I’d add is green onions as a little garnish 😙🤌🏼

Also you can bake without cheese. When almost done. Top with cheese and use the broiler to melt. Easy pezzy

Cans are definitely for this fast/easy version! Of course we’ve done it the “real” way - cooking the chicken ourselves, making the sauce, shredding blocks of cheese lol

If you spray your tin foil your cheese will no stick.
