Oh Rachel, those enchiladas look fantastic, will be trying this recipe. I will wait a month because its too hot in Texas to turn on the oven, it warms up my apartment. My mother, bless her heart has dementia as well as end stage cancer. She called me the other day to make her Mexican rice but she couldnt remember how to tell me to do it. I looked up your video and made it for her. She was so hapoy because her homemade recipe was so similar and the rice was delicious. God bless you and love your videos. In some ways you remind me of Rick Bayless, Mexico one plate at a time. I have been watching him since i was 8 rrs old and im now 40, thats how long he has been on television.
