A nice idea for using up leftovers! 👍 The potato soup becomes a delicacy when you add dried porcini mushrooms. My preferred use of leftover mashed potatoes: Mix with flour, 1 egg, marjoram and nutmeg to form a dough and then fry in clarified butter until golden brown. Applesauce goes perfectly with it.

Hello Rik, Some diced celery with the leafy tops would be good to go in with the onions. Some small diced carrots too. As for seasonings, besides the black pepper, celery seed is great in potato soup. I love potato soup. One can use leftover baked (jacket) potatoes to make soup too. Watching this video made my mouth water. Your soup looks so good , so smooth and creamy. Lovely.

Looks lovely! I'm thinking one medium potato diced small, boiled with touch salt till very tender, add it to soup after blending but before cream. Simply because I like some potato lumps in my potato soup. Maybe, as another person commented, some bacon bits!

I don’t often have left over mash as my son is a mash monster, but that’s a great way not to waste it. If there’s one thing I hate it’s wasting food. How can we justify it when there are people who are literally starving in the world? I find a use for everything. If it ends up I have to throw food away, I cry for a week! lol

There was a little period where Lurpak the so called bench mark butter reached around $11.50 a half pound although it has dropped drastically since. But oil went and stayed pretty crazy like $6 for for for 8oz for virgin olive oil. The world goes crazy.
