So none of my yarns are labeled, but how could I tell which thickness of yarn to use? Also if I just used thicker yarn and thicker hooks or smaller hooks would that change much?

Using thick yarn will make your project larger.

Hdc ( half double crochet) is easy. You can watch tutorial on yt. Search "crochet basic stitches". I hope this helps.
