Thank you for the ravioli recipe. I just got home and had it as a late lunch. In my opinion if you're going to have it cooking on low all day while you're at work, you might want to add the third can of tomatoes. I only used 2 and it was good but I got home at the 6 hour mark and I can see it getting dried out if i got home past 5 pm.

Use about 2 or 3 Bay leaves whole instead of sugar. When the sauce is done, remove the bay leaves. They draw the acidity of tomato sauces. The leaves can be used in other soup and stews made of tomato sauces. Basil adds a lovely sweetness. I ate dinner with a friend who poured in 1 full cup of white granulated sugar into a large pot of hot spaghetti sauce; then, served it over spaghetti. The Italian in the group nearly vomited and left the apartment. My friend the cook was about 5 months pregnant and said that was the way her grandmother made it. She cried and cried! We were compassionate.
