So nice to see this favorite!!! I’ve made this cake every year unless we were traveling or something prevented me making it. In recent years I’ve made it for neighborhood children who have birthdays around Easter!!! My hubby loves coconut, so even with watching his blood sugar, he will be extra careful around Easter so that he can enjoy the coconut on the icing!!! Nice to know that others like to make this, too! Hi thank you so much for your Mother’s Day wishes. Grandpa and I are doing well and we appreciate your concern. We have been very busy helping family members and trying to redo our garden. We have had a very rainy and chilly May. We are lucky if we get two nice sunny days in a week. At this time we usually have all the vegetables planted in the garden. We are not even ready to do the planting yet. We really need one week of warm sunny weather to get everything done. We always enjoy hearing from you.❤️Grandma👩🏻& Grandpa👨‍🍳

Thats really neat Grandma and Grandpa! Great job!? My Grandmother was a huge fan of coconut cake. I remember there was bakery near her that everyone claimed made to die for coconut cake. I am not a fan of coconut when it’s shredded, only if it’s chunks that come right from the coconut, but I tried a piece of this cake during a family get together and it was pretty good. Some of our ER equipment didn't work a few times.... Uncle Harry taught us to test it all every year on the holiday before the storm season starts. For MI it is Halloween for winter. That included flash lights, lanterns, cell chargers, stored water and pet food. Uncle Harry made it easy for us :) Glad you are on the mend !

Oh my gosh, Grandma! Do you really still have that cookbook? I think it was from the sweetened coconut company, or maybe Duncan Hines..? My mom used to make something from that booklet every year for my birthday...including the bunny. That's going back 60 years or so, into the dim mists of time.😂🐇 I still remember it fondly. Wish I could remember all the cake shapes that were in there. I was fascinated by it as a kid. Hope you and Grandpa enjoyed your yummy Easter cake!! Edit: Just got to the end of the video.
