In this video I show you how to make my easy and delicious enchiladas! They are oil free, dairy free, low fat and vegan. I lost 40 lbs in 11 months when I switched to a high starch, low fat plant based diet. I read the book "The Starch Solution" by Dr. John Mcdougall and it has forever changed my life. Not only did I lose 40 lbs but I also got rid of cystic acne, bad blood pressure, prediabetes, and bad cholesterol. I also had many female health issues going on that completely reversed after eating this way. Im sharing my journey and how I did it.

Hello Kiki, I made the recipe today and it was really good. I only added a bit of fresh cilantro when I layered it. Very versatile recipe. BTW I made your cheese sauce and its the best I've seen hands down. I've made several of your recipes and I've not been disappointed as they are thoughtfully done and tested! Truly fabulous. Try adding pureed cooked cauliflower instead of coconut creamer. It does the same thing without the saturated fat of coconut but with heart healing nitric oxide and fiber of cauliflower. That could be called Mexican Lazagne.

I shop at Trader Joe's all the time and have never noticed they sell a non-dairy creamer. I'll be looking for that on my next grocery trip. And the Bob's Red Mill dehydrated potatoes is a great tip, I've never heard of that either. Thank you for making this easy for us!

We make something similar. I cut up the tortillas which makes it easy to serve. Looks more casserole like but everything stays moist.

Ok so enchilada sauce from the store is hard....we have a little local brand hat makes an oil free vegan one but that doesn’t help everyone else....what I often do is just blend a can of tomato sauce with chili powder, garlic and onion powder and some salt and a splash of vinegar to make a quick one:)

Brook oh I’m so glad you found the video! I make a low fat cashew sauce for this one otherwise you can make a fat free oat meal one. My family loves the cashew one, it only has like 1/2 cup of cashews for 4 cups of cheese

I don’t know I add a lot of water, this batch was 3 cups potatoes, 1/2 cup carrots, 1/2 cup cashews...seasonings and like 3 cups of water🤷🏻‍♀️

Corn tortillas are always oil free, corn , lime and water unless you are thinking of flour tortillas then, yes. Oil is used to make them

I’m in Ontario, Canada and mine have sunflower oil. It’s the last ingredient but there is some oil.
