Caramelized Apple Sauce
1 cup - White Sugar
1 tbsp - Unsalted Butter
1/2 tsp - Salt & pepper mix
1/2 tsp - brown sauce powder
1 tbsp - Unsweetened Orange Marmalade
Method :
1. Melt the sugar with some water on the pan.
2. DO NOT STIR! Just wait till it turns to a golden brown.
3. Add the butter once the desired brown colour is achieved.
4. Stir it until fully emulsified and then add the apples.
5. Stir for 1 minute then add the Salt & pepper, Brown sauce powder & orange marmalade.
6. Keep on a low heat throughout and use a spoon to try to cut the apple. Once it is soft, then it is DONE!
Foie Gras - Frozen! DO NOT THAW, COOK FROM FROZEN!

Method :
1. Start with a low heat on a pan. Add the frozen Foie Gras in and leave it there for 3 minutes. You can give it a stir or 2 every minute.
2. Flip it then cover the pan with a lid for another 3 minutes, still on a very low heat.
3. Remove the lid and flip. If you find that there isnt enough crust, then increase the heat for a while to get a nice sear.
4. the foie gras should be very soft like jelly to the touch.
5. Serve & eat immediately!
