Easy Fried Okra Curry / Indian Bhindi Curry (Fiji Style)
Ingredients:
• 500g thinly sliced Okra/Bhindi
• 1 medium onion chopped
• ½ cumin seeds
• ½ mustard seeds
• 1 small chilli
• 2 sprigs curry leaves
• 2 tbsp grated garlic
• ¼ cup Oil
• Salt to taste
• 1 tbsp Lemon juice
Method:
1. Put a non-stick fry pan on medium heat
2. Add ¼ cup of oil, heat for 30 seconds and add cumin and mustard seeds
3. When the seeds start to sizzle add your onions, curry leaves, chilli and garlic
4. Give a quick mix and cook until light golden
5. Add bhindi and salt to taste and give it a quick mix
6. Cook it for 10 minutes with the lid on, stirring twice during cooking
7. Give it a good mix and taste your salt again
8. Add lemon juice, give it a good mix and taste your salt
9. Cook it for a further 5 minutes
10. Mix again and taste your salt again
11. Serve it with Rotis
12. Enjoy
