Among the good, old, traditional recipes of Goa is the Feijoada. Found commonly in regions once colonised by the Portuguese, Feijoada (pronounced 'Feijoad') is a stew of beans with beef and pork. The name feijoada is derived from feijão, which means 'bean' in Portuguese. The Goan Feijoada uses red beans (Pinto beans or kidney beans) with the spicy, flavourful and local Goan sausages. Since the sausages are spiced thoroughly, the recipe itself needs few ingredients rendering it an easy dish! The goodness of beans and meat meet to give a wholesome meal that's mouthwatering!

Ingredients:
(1 US Cup = 240 ml)
Prepare the beans:
1 cup Pinto beans (or red kidney beans), washed and soaked overnight
Water as needed
1 teaspoon Salt (more or less)
Pressure cook for 3-4 whistles
For the Feijoada:
2 - 3 Tablespoons of Oil
1/2 teaspoon Cumin Seeds
1 large Onion, finely sliced & then halved
1 large Tomato, finely chopped
2 teaspoons Kashmiri Red Chilli Powder
10 - 12 Goan sausages (large ones; if toure using the smaller ones, you'll need at least 25-30)
The cooked beans
Approximately 1/2 Cup Water, or as preferred
Salt as needed
1/2 teaspoon Sugar
1 slit Green Chilli
Coriander leaves for garnish
