I don't think it's healthy to have a cat on the counter when you're cooking for the public this is why I don't eat from people's houses because the holder animals play with animals and love the animals where they cook at and it's very unhealthy but thanks for the videos. 👍🏽

I made this meal plan this week! One tip: put the "cold" taco items in a separate small container so you can microwave the sweet potato/seitan/beans separately and then top it with the container of cold lettuce/tomato/cilantro/lime/salsa. 🎉

you have no idea how incredibly impactful this video-- and all of your other content like it-- is. or maybe you do! i hope you do!!!! it is life changing for people like me who can be very high anxiety, depressed, or overwhelmed, and also would benefit significantly from a complete, healthy diet, but don't know where to start/are overwhelmed by all that goes into cooking and nutrition. you have helped me get back on track with my nutrition, feel better mentally and physically, am now able to have a meal that's already prepped instead of reaching for the closest, low quality food in moments of stress, AND i noticed i've saved a ton of money because everything i'm buying from the grocery store has an intention-- nothing is unnecessarily purchased! incorporating these meal preps into my life gives me a sense of control that is so empowering to me and snowballs into other life improvements. not to mention the greater message to the world this has. you are debunking every single nonsensical, unfounded (but unfortunately widespread) claim that vegans somehow cannot get the nutrients we need, and the impact of that is greater and deeper than can be expressed. thank you so much. this content is so high-quality and practical-- but i hope you also now how seriously meaningful it is to others. incredibly inspirational! sending love to the cool humans running this account!!!

Keep doing those kinds of videos please, they are the best ! I love the inspiration and the nutritional breakdown. You could do different one with different calories target. Or some with theme (no gluten, no soy, Mexican inspired, Mediterranean, Indian, etc) so everyone has something they need.

Overnight oats are the best! Takes like 5 minutes to make four breakfasts, plus it tastes amazing. I personally LOVE raspberries and peanut butter, the two taste great together. The carrot cake one is a great idea, I've heard of it, but never tried it. Carrots have great natural sweetness.

I make overnight oats using nearly the same recipe (I just add 1/4 tsp turmeric for an additional anti-inflammatory boost) and it is sooo good. I don't like cold oats, so I just heat them up- easy peasy! LOVE your tofu crumbles technique. It's so versatile!! Thanks for sharing.

Crumbling tofu was a game changer for me, before I didn't like tofu, cubes just looked super creepy to me. I used HelloFresh to learn vegan recipes (SUPER good for that btw, the vegan chickpea curry was out of this world, and the vegan bibimbap is like a staple for me, not a single bad dish), and for the vegan bibimbap, they had crumbled the tofu. If you want to ever try vegan bibimbap, if you look up "vegan bibimbap," there's actually a recipe that is very similar, but I crumble the tofu and cook it with the sauce instead of topping it with it.

The thing you are using for breakfast isn't hemp seeds btw, it's hemp hearts. There's a difference. Hemp seeds still has the shell on which makes them more crunchy than hearts which have the shell removed. This is kind of important I would assume because you don't want crunchy seeds in your overnight oats

Great video! Fyi a good tip for folks who want sweet potatoes fast, get a steamer and a pot of water and steam them, takes about 12 minutes compared to 45 for cooking in the oven and tastes soo good! Japanese and purple sweet potatoes are my fave, less sweet than garnets but so flavorful! 😋

These are excellent video's, please please do more, I'm finding them incredibly useful. I tend to cook my sweet potatoes in the slow cooker/crockpot on low for 5/6 hours or high for 3-4 hours. Keeps the oven free and is hands off. Plus my children don't like crispy skins on their potatoes. So just a way of keeping your oven free!

I just wanted to add that for anyone who deals with calcium oxalate kidney stones or who has kidney disease, make sure to consider the oxalate levels of some of the ingredients. Almonds and tofu are especially high in oxalates. You may want to consider replacing almonds with some lower oxalate nuts like pecans. The vast majority of folks don’t need to worry about this. Unfortunately, I’m one of those guys that do have to watch it. Ugh. Thanks again for these awesome recipes.

White rice is better for muscle building because it digests quickly and is less likely to cause gastrointestinal issues, white rice works well with a pre-workout meal. For a post-workout meal, it helps to repair muscle damage and refill glycogen stores, better then brown rice which is key for building muscle.

Interesting aside, the tofu isn't supplimented with calcium for the nutrients. Calcium sulfate (gypsum) just happens to be one of the most common coagulants to get the soy milk to curdle so the tofu can be pressed. There are other coagulants and some makers will use others or mixes depending on the curd texture they're going for.

If you're watching your carbs (like me), you can make your rice the day before, refrigerate it overnight, and reheat it to eat it. This changes it into resistant starch which is not absorbed by your body and is good for your gut bacteria. The "motivational Doc" youtube channel, explains it better.

Thank you, this is great! For me, I'd change the amount of soy sauce because that ends up being more than 1,500mg per serving! I'd do 1/4 cup of soy sauce (or personally amino acids) and 1/4 cup of veggie broth. I'd also add my lettuce and tomatoes to sweet potato bowls after I've heated them up.

This is awesome and will come in very handy for my weight loss and training goals. I'm not a vegan entirely, but eat a lot of vegan and whenever possible. The 120g protein is fantastic, as my daily min. is 100g, however 1800 is above my current daily calorie goal of around 1500-1550, 1600 max. Any suggestions of what I can tweak in your video's recipes to lower the calories a bit to be in that daily range? Thanks so much! (p.s. your website calculator is great too!)

Love this! You're so welcome! If possible, you might actually feel better along your weight loss journey by adding a bit more activity to your daily schedule (like a 30-minute walk) and keeping your calories higher. If you burn another 200 calories per day, then you can eat 1,800 calories and your weight loss results will be the same as eating 1,600 calories without the additional activity. In general, I recommend eating more and moving more. Not eating less. But, we actually have a 1,600-calorie meal prep too, which is super delicious and filling! I do have a question though, regarding the nutritional value (e.g. b12) of nutritional yeast being largely destroyed if you cook it as you do here (best to add before serving or right at the end of cooking..) , i had heard that is the case, what do you think? And more generally regarding bio-availability of nutrients, have you studied the bioavailability of the nutrients in this plan and cooked in this way? Many thanks

Good question. That could be a concern if you eat cooked nutritional yeast but because I eat it regularly not cooked, it's not as much a worry for me.

Oh love this. Sauce looks so good. Quick question do you freeze them? I’m very careful around reheating rice after 24 hours. Great tips. I’m 5 years vegan. Love this gets all vits and mins. Your cat is the best!

Thank you for showing an easy and delicious way to food prep protein rich vegan food. One question I have is how do you heat up the potato bowl with fresh lettuce in? Do you just remove that before heating?

Glad to hear it! What you wrote could be a solution for the lettuce. Another option could be storing your lettuce in a separate container until you're ready to eat. Hope that helps. 💚🙂🌱

How do you warm up warm and cold items afterwards if they are already mixed together like in your sweet potatoe dish (sweet potate and Tomatoes etc.)? Do you eat the peal of the sweet potatoe as well?

Thank you! This amazing. I am an animal lover. I raised 3 cats but they never were allowed on tables or countertops. Cats will cause dangerous bacteria that come from their feces to get on your food. I'm sure you sanitize! Just be safe! I'm surprised you didnt get more negative comments about that. I'm not being negative at all . I'm just in healthcare so I can say that.
