Hi Jordan: I just wanted to thank you for this recipe. I made it and it was really good. I didn't use the egg whites, I made it with water. I made pignoli cookies and everyone raved about how good the cookies turned out. I'm going to be more generous with the almond extract when I make the next batch. Again, thank you

Hello, drain the almonds, put them on the cloth, take the four ends and form a bag, and scrub them quickly before they get cold, and you will be almost all peeled at once. gracias por la receta.

I never knew it was so easy. I just bought some today at the supermarket to make cookies with and spent $16 for a pound of it. It looks like you can make your own for about half that.

Equal parts of sugar and ground almonds would work.
@lavenderbutterfly1433 Жыл бұрын
If I'm understanding the recipe correctly, they are equal parts according to WEIGHT (not cup for cup) of almonds and powdered sugar.

Is this paste used to put inside bear claw dough as a filling? Thank you. (If you hadn't drawn attention to your belly hanging over the countertop, I'm sure no one would've noticed since we are more interested in seeing how to make the almond paste).
@iamcrispy70044 жыл бұрын
yes, you can do that I think. If you find it too dry once baked add a little water next time. I make mine with almond cream. this is different: ground almonds+ granulated sugar + eggs + butter in equal amounts (no blanching needed) + some almond extract, processed in food processor till smooth - add a little flour for a thicker filling and less that equal part of butter (better in my opinion). The almonds don't have to be ground as fine.

0:10 What is inside the bowl above the powdered sugar? Is that melted butter?
@kosherbacon24785 жыл бұрын
Jasón Hey Jasón! that is an egg white in that shot, you can use that or water need be. From my experience an egg white will give you a slightly more elastic texture like if you wanted to roll it out and cover a cake fondant style. Also adding a little bit of corn syrup could do the same effect but I’m not crazy about using that ingredient if I really don’t have to. I do water more often as I usually mix the almost paste into other desserts, like rainbow cookies or almond tarts, to where that slight difference in texture really won’t matter. Sorry for the rant lol egg white is your answer

Carol Ann Mancuso start off with half a tablespoon and then add a little bit at a time until it becomes one smooth piece. Be careful not to add too much or it will be more like a spread and less like a log. Thanks for watching and happy holidays!! :)

Hi is marzipan same as almond paste?also can this recipe be used in baking recipes that call for almond paste?thank you
@kosherbacon24786 жыл бұрын
Hi there! Marzipan and almond paste are very similar but differ in the ratios of sugar to almonds. Marzipan has a lot more sugar but less almonds compared to almond paste so it’s sweeter and more pliable like fondant. Almond paste has more almonds but less sugar so it’s more coarse and somewhat less sweet lol and this recipe is fine for when it calls for almond paste. Thanks for watching and enjoy your holiday!
