My dad was an Italian baker and he passed away, I wasn’t able to learn from him or receive our recipes. These cookies have always been my favorite and this is the only authentic recipe I could find. Thank you!

freeze the almond paste and then use a cheese grater/shredder to shred the frozen almond paste.

I'm Romanian. How did you like your experience when you went to Romania?

I absolutely loved being in Romania! The country had just opened up and the locals were so happy to see us, meet us. And the food was sooooooooo good. It was such a blessed time.

I don't understand these almond cookie recipes, I make my own almond paste and its almonds egg whites and sugar, this recipe calls for almond paste, and then also calls for sugar almonds and egg whites, surely this is the equivalent of adding almond paste to almond paste. I just don't get it.

The almond paste makes the cookie more tender and creamy. I don't think you can get that with just ground almonds and eggs white that haven't been "pasted" together. But I'm not entirely sure! All I know is that these cookies are amazing. ;)
