Bree James I know you asked this a long time ago, but just so you know, slow cooker probably not a good idea. But you can throw it in the oven real easy. Cook at 200 for a couple hours.

I started making my homemade bacon earlier this year, and have given lots of it away to family. I've done dozens of bellies and my absolute favorite way to make bacon is by brining with salt, sugar, pink salt, garlic, paprika, mustard powder, thyme, and black pepper. After 4-6 days and a washing of the belly, I put a heavy coat of black pepper and a small amount of garlic powder to form a crust with a hot smoke at 200F until it reaches an internal temperature of 150F-155F. It's like pure meat gold!

Guga, just made a batch of this for Easter. Half the belly using your recipe, half using a mix of pepper, garlic powder, onion powder, and paprika along with the sugar and salt. Will have to try more slices to tell you which one is better😁. And for those at home who don’t have a smoker, this is also really good straight out of the cure.

Guga and Angel, I appreciate you guys. I make bacon about once a month and will try the ponzu. I don't need the pink salt--I use celery seed in my brine, and it has sufficient nitrites (plus we eat it up so fast). Thank you for your fun videos!

Thank you for sharing. My friend and I used to make kilos and more kilos for the Four Seasons Resort in Punta de Mita, Mexico. We did it using an adobe and brick home made oven. We used real bee honey, smoked with any citrus wood, normally lemon, orange or even yaka. forr the salt we used local ocean salt. It was delicious. Rubbing it for 2 hours and let it seat for a week. Was a nice job. My friend died and Four Seasons decided to buy from Cosco. Life is good.

Excellent video, I was truly inspired. I have always wanted to try making bacon , so that being said: I Just finished making this about 2 hours ago. I used the brining recipe here and found it way too salty. I was able to remove some of the salt by blanching the bacon in boiling water for 60 seconds before frying it. I think next time I'll cut back on the salt and increase the brown sugar. I may leave out the ponzu sauce to see if it made a difference. I smoked the bacon at 225 and it reached 155F in about 90 minutes. Next time I'll drop the temp to 210 and go for a longer smoke/cook time. Even with my rookie mistakes , this is still so much better than store-bought bacon.

I've followed this recipe four times now with my own pork belly and Guga is right - this is the best bacon you'll ever taste, unlike anything you'll get from the store. I've smoked it with Birch, Oak, Cherry, and Apple and each time the taste is smooth and strong but each wood has imparted a noticably different flavor profile - with Birch being, surprisingly, my favorite. Perhaps best of all, the price to buy a raw pork belly and turn it into bacon myself has been half what it would have been to purchase a vastly inferior bacon from the store! Plus, the process is really enjoyable, especially as you have complete control over the end result. Thanks GUGA!

Hi. The trick is to keep the temp between 225 and 250 Fahrenheit. I set my top vent half open on my Weber kettle grill, And my lower event is a quarter open. This keeps my temps consistent, but I only set them when they have reached that 225 to 250 range. Hopefully that helps!

This turned out so good thank you I smoked mine with 2 foil packs of pellets on my barbecue used my turbo burner only and stayed at 200 degrees added fresh foil pack after 1 hour. Smoked it for 2 hours. Used cornstarch syrup too lol still was amazing!

You can say it’s giving into Instagram trends, but for me the perfect BLT is to make a bacon weave out of three strips cut in half with a sun-dried tomato basil mayo. The bacon doesn’t try to escape and it’s just a nice solid piece of meat, and the tomatoes and basil in the mayo just give it a really cool kick.

I live in Colorado, there's actually really good bacon at my supermarket at the meat counter. They have 4 varieties but my favorite is green chili used in the brine. Looks good!

YMMV, but I tried this following the recipe to the letter, smoking at low temps to 155deg. Belly was tough as shoe leather and very, very salty (yes, I rinsed it thoroughly before smoking). Flavor? Not to our liking but may and likely is due to Ponzu sauce which is new and unfamiliar to us. Love all your stuff. Keep it up. Not every rocket makes it to space.
