It has been my experience that the cocoa powder will mix easier if you stir it together with the sugar before adding it into the water. I would probably stir a little butter into the hot chocolate along with the vanilla extract, before cooling it. Thanks for sharing your recipe!

You can absolutely add the cocoa with the sugar; however, I prefer to sift to ensure the cocoa doesn’t have any lumps. By adding the sugar and cocoa it only incorporates the two; sifting helps with a smooth texture. As for adding the butter, this is done for a sauce NOT a syrup. A sauce contains fat (butter/cream/milk) whereas a syrup does not. A syrup is water with no added fat. That would be the difference. Thanks for watching and your comment. Looks delicious! How would it do in making an iced mocha latte coffee?? I tried a recipe that just called for the cocoa powder, but not dissolved. But it tasted pretty good. In making an iced or hot mocha latte, how much finished syrup do you recommend using per 8 ozs of brewed espresso??
