EASY HOMEMADE FALAFELS | TWO MINUTE FATBREADS | FALAFEL WRAPS | FALAFEL RECIPE |
Falafels
225g chickpeas (1 tin)
5 garlic cloves
1 tsp olive oil
1 small onion, roughly chopped
1 tsp parsley
1 tbsp flour
1 tsp salt
1 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp turmeric
1/4 tsp black pepper
1/4 tsp cayenne pepper
25g pine nuts, dry roasted
a handful of callaloo
vegetable oil for shallow frying
Roast your garlic cloves with the skin on in the olive oil, for 30 mins at 200C/400C. Squeeze the garlic from the skin with the flat side of the knife when done.
Add all of the ingredients to a food processor. Whizz until quite smooth, scraping down the sides now and again to incorporate into the mixture.
Once smooth, shape into small flat balls (approx 2 tbsp of the mixture). Add to an airfryer and cook for 20 minutes at 185 degrees, turning once.
OR
Put enough vegetable oil into a frying pan to cover the bottom by about 1cm and heat to a medium high heat. Fry the falafels in batches, for a few minutes on each side until a dark golden colour and cooked through. Drain on paper towels.
FLATBREADS (makes 2 large or 4 small)
150g plain flour
pinch of salt
100-110 ml water
Mix together to form a dough and gently knead for a minute or so in the bowl. Divide the dough into the number of flatbreads desired and roll into balls.
On a well floured surface, roll out a ball of dough into a rough circle until a few millimetres thick. In a gently heated non stick frying pan, cook for a minute or so on each side until lightly browned and starting to rise.
