EPISODE 48: Let's Make Grated Pasta Dough for Soup. In Slovenian this is called 'Ribana kaša'. It is my favourite homemade noodle pasta, It is super easy to make and my children just LOVE it too. It brings homemade broth to a whole new level. Let's get started!
⬇️ Ingredients for Pasta noodles ⬇️
3/4 cup flour
1 large egg, beaten
1/2 tsp salt

⬇️⬇️⬇️ My Homemade beef broth ⬇️⬇️⬇️
1 Kg of beef bones
2 small yellow onions, unpeeled
2 leeks, roots & stems removed
2 carrots
2 celery stalks
7 garlic cloves, unpeeled
1/2 of a red pepper
3 sprigs fresh thyme
8 parsley stems
2 dry bay leaves
8-10 black peppercorns
Parmesan rind
👉🏻 Add all the above ingredients to a large pot and cover with cold water. Bring to a boil.
👉🏻 As soon as it boils, reduce heat to a medium low, just to maintain a gentle simmer.
👉🏻 Continue to simmer for 3 to 4 hours.
👉🏻 Remove the pot from the heat. Ladle the stock through a fine-mesh strainer. Discard the solids. Cool the stock completely and if not using immediately, store in the refrigerator for up to 4 days or freeze for up to 2 months.

Yes, this is what my mom often made instead of the noodles! I thought it was called kaša but wasn't sure. Now I know I was right. This is like the German Spätzle. Such soft pasta in soups. Really good!!

Thank you for this. My grandmother (gottschee german/slovenian) always made this type of noodle in her chicken soup. Some of the other things on your channel are exactly like hers too.
