A fun story from when I was growing up, my grandmother called this "plucking bread." So my parents told me that when I was two years old, I walked into the kitchen, and asked my grandmother, "Mama Jean, can you please make me some fucking bread." She had a stern talking with my parents about what they say around me. Took em a while to figure out what I wanted.

Dough: • 640 grams AP flour • 52 grams granulated sugar • 5 grams salt • 82 grams unsalted butter gently melted • 375 ml milk @ 95f • 1 package/ 7 grams instant yeast 1. Mix milk with instant yeast and let sit. 2. While that’s sitting mix dry ingredients into mixing bowl. 3. With stand mixer steadily pour in melted butter to dry ingredients on medium speed. 4. Next pour in yeast milk mixture followed by 2 eggs 5. Mix for 3-4 minutes or until homogeneous. It will be sticky 6. Flop dough onto floured work surface, slap and fold a few times then gently shape into ball. Let sit for 10 minutes in well greased covered bowl. 7. Again flop dough onto floured work surface and slap and fold for 2 minutes. Again shape into ball. Let sit for 1-2 hours in well greased covered bowl or until double Caramel sauce: 1 cup granulated sugar 1/4 cup water 1 cinnamon stick 1/3 cup Cold butter 1/3 cup Whole milk 1. In medium saucepan stir sugar and water until thoroughly saturated, then heat on medium low until sugar dissolves. 2. Char cinnamon stick lightly with torch then add to saucepan. Simmer for 5-8 minutes or until light amber. 3. Whisk in 1/3 cup cold butter, once emulsified whisk in 1/3 cup whole milk. Pour into container and let cool. Cinnamon sugar substitute for Garam masala: 1 cup granulated sugar 1 tablespoon cinnamon powder Back to dough: 1. Punch dough to release air, then flop out and divide into 45 little pieces weighing around 28-30g each. 2. Roll all balls into T a u g h t and Supple Balls. 3. Lightly grease your bunt pan and roll balls into sugar and place in bunt pan (1. Dough piece, 2. ball, 3. sugar, 4. bunt pan, repeat) 4. Let proof for 20 minutes room temp. 5. While that’s proofing make butter brown sugar sauce. Melt 1/2 cup butter with 1 cup brown sugar in medium saucepan and simmer until homogeneous. 6. Pour brown sugar glaze over proofed monkey bread. 7. Bake in oven @350f for 35-45 minutes or until golden brown.

Garam masala for a dessert is quite an unusual ingredient. In India, from where garam masala originates, is made using whole chillies, cumin coriander seeds etc etc, which might just not taste very well in a dessert. So if someone wants to get garam masala, check for different brands and ingredients suited better for a dessert, or better yet go for "tea or chai masala" which typically has cinnamon, fennel, cardamom, ginger, cloves etc all of which would taste amazing in a dessert.

I refute your argument that chillies, corriander seed, cumin seeds do not work in desserts. ( We have mango chutneys here that uses them specifically) 3. I just made this and my tips below: 1. Roll all the balls before dropping in butter. It’s faster and less messy. 2. Use forks for each coating - your hands will get sticky immediately and you can’t wash your hands constantly. 3. I was only left with a small amount of butter - just FYI. So the drizzle thing didn’t happen for me. EDIT: if you run out of butter like I did, melt more. It helps with the browning process for the bread at the bottom. I didn’t melt more and I had a lot less browning at the bottom.

@@grym7er747 Ingredients: • ¾ cup chopped pecans • ½ cup butter • 1/3 cup pure maple syrup • ¾ cup sugar • 2 teaspoons ground cinnamon • 2 cans (340 g each) refrigerated country biscuits • 1 250 g package cream cheese cut into 20 cubes. Directions: - Spray 12 cup fluted tube pan or 10-inch tube pan with cooking spray. - Sprinkle pecans evenly on the bottom of the prepared pan. - Melt 2 tablespoons of the butter in a microwaveable bowl. - Add syrup to the butter and mix well. - Drizzle over the pecans in the pan; set aside. - Melt the remaining butter. - Mix the sugar and cinnamon in a shallow dish. - Separate the dough into 20 biscuits and press each slightly to a ¼ inch thickness. - Place 1 cream cheese cube in the center of each biscuit circle. - Gather up the sides of the dough to enclose the filling. - Press the edges of the dough together to seal and roll into a ball. - Roll the balls in the melted butter and then the cinnamon sugar mixture and place them in the pan. - Arrange half of the balls in the prepared pan. - Repeat with the remaining balls to form a second layer. - Drizzle with any remaining butter. - Sprinkle with any of the remaining cinnamon sugar mixture. - Bake at 400°F for 30 minutes or until golden brown. - Cool 1 minute in the pan. - Invert onto serving platter and scrape any pecans in the pan onto the top of the buns. My dad uses the Pillsbury country biscuits for ease, but you could make Josh's dough and fill them with the cream cheese. If you make these, I hope you enjoy them as much as I do!

I made the caramel sauce with twice the rum simply because there wasn’t that much left in the bottle and I have to say that it was the best sauce I’ve ever made. Thank you, Joshua. Beware of one thing, however. If you go by the transcript you will wind up adding a fourth of a cup of salt to the dry mix which will ruin everything and you will have to start all over again. 🙁

@@AgathaBinoche I made this a long time ago but I don't recall using garam masala. It is a spice used in curries and it isn't conventionally used in dessets. Instead I just went with cinnamon and nutmeg. You may add a little ginger powder if you want.

I just made this today, and it was the softest fluffiest bread ever! Very easy to follow instructions and it rose heaps in the oven. I left out the graham masala and just substituted with cinnamon and it was amazing. The caramel spilled over in the oven so make sure you have something underneath to catch it. Also next time I'll cover it with foil during the last few minutes as it browned too much in some spots. Thanks Joshua for sharing!

Hey Joshua, Thank you for this recipe! Made several variations of it, and became a local legend: - the savory version, but mixed the butter with smoked paprika, and spices from your biryani video, served with the dips from the same video. - "aranygaluska": dipped the balls directly into the rum caramel, rolled into crushed wahlnuts, served with vanilla custard. - savory, with "italian" herbs in butter, and a piece of mozarella in the center of each ball. - cocoa powder mixed in the dough, home made blueberry jam in the middle, rolled into cocoa-cinnamon sugar, served with chocolate and coffee fudge poured all over.

Literally followed another big cooking youtuber making monkey bread a few weeks ago and they mixed it in with the dry ingredients... failed me twice. @@pkpantheryt3326 I followed Joshua's loaf bread instructions when I tried re-doing the recipe that gave me trouble. Mixing the yeast into the dry ingredients is a terrible idea and Joshua shows a good way to do it - let it set up in the wet ingredients. I also add a tiny pinch of sugar to feed the yeastie beasties.

The other person likely used instant yeast instead of active yeast, in which case it doesn’t need to be “activated” in a warm liquid and can be thrown in with the dry.

My favorite is just full cinnamon sugar, with a hint of vanilla because it works. Add on a cinnamon sugar glaze for extra goodness, or do what my friends do with theirs and provide dipping sauces. Raspberry syrup works surprisingly well, as does chocolate sauce. And then there's that one guy who dips it in ketchup.

The only conceivable improvement I could imagine for the sweet one would be to dust the top lightly with powdered sugar. Or perhaps torch the caramel sauce just a little bit; I can't resist burnt caramel! Dunk the savory in a simple but delicious tomato sauce with some fresh mozzarella! @@AgathaBinoche Yes, I went to the grocery store and found a quality masala brand. When I looked at the individual ingredients I realized I had all of them at home. So I looked up a recipe to make it from scratch. Delicious and a warm sensation of seasoning. However, if you don't have items like black cardamom or Szechuan peppercorn you might just want to purchase a bottle of garahm masala. I hope this helps.

Yum! I found that inverting the Bundt pan during the proof evened things out a bit. Oh and pecans! I had a bunch of leftover garam masala sugar. Put some in my coffee with a little of the rum sauce and wow. Turned the rest into compound butter and I expect it to make amazing hot buttered rum!

I'm posting this comment before watching. Making sweet dough isn't that hard, expensive, or time consuming, so much so that I had a craving for monkey bread at 7 pm one night, starting making the dough, and was finished by around 9:30. The quality of the dough might have been lesser than a more enriched and luscious brioche, but was enough to satisfy my sweet tooth. I believe it all started when I discovered what we call Monkey Bread originated in Hungary, from a dessert called arany galuska, or Golden dumplings.

As a coeliac person, just take any normal recipe and substitute the regular flour for GF flour :)

This is not your answer, but I do know Pamela’s brand makes great baking mix and artisan bread mix that you might want to try (granddaughter was diagnosed celiac, then they took it back, and now they think so again. Argh). I think it’s so good because it includes almond flour.

@@LaniakeaLeathercrafts yeah, if the flour you use doesn’t contain psyllium husk or xanthan gum, you’re not going to get the right result (unless you add them yourself). And probably other factors I’ve forgotten. I think King Arthur’s version does claim a one-for-one substitution is good.
