We used to make this when I was growing up in the '60s. This is how my mom taught me to make perfectly round rolls.I learned how to pinch the dough up with my thumb and first finger to make little balls of dough. We then put them in a loaf pan with butter that was seasoned with garlic onion thyme butter and pepper. We called it bubble bread I still make it today

Just made this! Turned out to be the best monkey bread I've ever had. Here are my thoughts on the recipe: I didn't have a bundt pan so I used a large springform pan; it wasn't quite big enough however, because it was packed to nearly overflowing by the time the baking was done. The very bottom/middle was still a bit doughy. In hindsight, should have just divided the dough between 2 loaf pans. It's a time-consuming recipe to make in the morning before breakfast, so I did everything the night before, right after the second rise; covered, put in the fridge overnight, then preheated the oven in the morning while I made the sauce. I highly recommend this, because who wants to spend two + hours making breakfast in the morning? This recipe does make a lot. My family of 3 really went to town on this, but we were stuffed and there was still about 1/4 of it left. So again, in future, divide the dough between 2 loaf pans and then just freeze one of them after the last rise. You will be happy later to have a quick monkey bread in the freezer. Growing up we always added chopped pecans to our monkey bread! For individual portions, I sometimes make it in a cupcake/muffin pan, adjusting the baking time down a bit. Usually just 4 to 5 pieces per cupcake well, for anyone wanting to try that method.

3 large room temp eggs whisked small bowl In stand mixer bowl 4 cups all purpose flour (480 g, 80g set aside) 1/2 cup granulated sugar (100g) 1 packet instant yeast (2 1/4 tsp or .25oz) 2 tsp salt Whisk together and make well in center In small bowl with whisked eggs slowly add 1 cup whole milk (110f-120f) whisking, add 4tbsp melted butter, whisk. Dump wet ingredients into well. Mix with dough hook 7-8 min. Then add the held back 80g all purpose flour one tablespoon at a time until fully incorporated. Keep mixing until you have hit about 15 min total. You’ll know when the dough is done when it’s tacky but doesn’t stick to finger. The rest of the recipe is on the link.

Tip: Make a french toast version with storebought challah and dunk them in eggs, then sugar and cinnamon, and follow the rest of the recipe. I used a similar one on Thanksgiving - so good!

In the 80’s this was a great dessert after dinner at a restaurant called “ Pipers” in San Leandro, CA near Oakland. It was called “ Cinnamon bread! an Old dessert. The church folks would have great food and rip into this bread.

Never heard of monkey bread before. That's a brilliant recipe and it's not too difficult - I'm definitely going to try it. It'd be the ideal treat to have (slightly warm) at tea time on Boxing Day after a long walk through the countryside or a park as you try to work off some of the Christmas feast calories! Pro tip.... put the sugar and spices in a baggie and toss the dough bits in it. This helps when the kids are too "grown up" to help and your grandchild is still at that stage that everything goes into her mouth. Later on, I will invoke my right to have her work as "grandma's special little sous chef". But until then, that right goes to the zip-loc baggie. :P
