In today’s recipe you’ll learn how with wholesome ingredients like red lentils and quinoa, you can make delicious and nutritious flatbread or tortilla. This recipe is not only easy to make but also gluten-free, packed with protein and super-versatile. Enjoy the wholesome and protein-rich flatbreads or tortillas for your favorite wraps, tacos, or as a base for a variety of delicious dishes.
Instructions:
Begin by soaking together (or separately if you prefer, but it doesn’t make a difference) raw red lentils and raw quinoa in water overnight, preferably in the fridge. After a thorough rinse and strain, transfer the mixture to a blender. Add water and salt, then blend until the batter is silky smooth.
In a hot nonstick pan lightly brushed with some oil (we used coconut oil), pour approximately 1/3 cup of the runny batter. Cook each side for 1 to 2 minutes, just like when making a crepe but turn each side twice or more until you reach the desired flatbread / tortilla consistency or texture.
Ingredients:
These amounts were enough to make 7 medium sized flatbread or tortilla:
1/2 cup red lentils (90 g)
1/2 cup raw quinoa (100g)
1 ½ cups of water (you need to strain very well soaked lentils and quinoa)
1/2 tsp. salt
Coconut oil (or other oil of your choice for lightly brushing the pan)
The Macros per 1 flatbread or tortilla:
Energy: 99 calories
Protein: 5.1 g
Fat: 1.15 g
Carbohydrates: 17.28 g
Fiber: 2.4 g
Iron: 1.6 mg

I made these today and they turned out really well! What remains to be seen is how flexible they stay while being stored in the fridge but I am hopeful. Thanks for the recipe!

Thanks for the feedback. I’m glad you liked them 🙏🥰 If you like them soft, put them one on top of each other while just cooked as I did in the video. They stay really soft even after you keep them in the fridge (I keep mine for up to 1 week) or even in the freezer. You just need to warm them up for a bit and they go as in day 1. If you like them more like a thick flatbread (drier), put them to cool down individually after they’re just cooked through 🙏🥰

@@zaracooks Awesome thank you so much! Yes I did put them on top of each other as I was cooking. I had one after they cooled off and it was still nice and soft the rest are in the fridge now. I had the first one with some chickpea "tuna" and the second with some leftover kichdi and homemade brinjal pickle rolled inside which was equally delicious. This is far better than any store-bought gluten-free tortilla made from rice, teff or cassava, those are always too hard and tough.

@@a.taylor3000 yes, probably the butter was a bit too runny and most likely you didn’t let them cook through enough. You need to turn back and forth as much as it takes (under low- medium heat) until they are dried out from all liquids and look well cooked. It takes some trial and error until you’ll get them perfect 🙏🥰

I just made these today, with one minor addition. I made a half batch & added 2 tsp of a mild herb blend to the batter (Litehouse Poultry Herb Blend). I filled the tortilla with my homemade white bean hummus, avocado, grated carrot & some of my homegrown alfalfa/red clover sprouts. Absolutely delicious. I have made red lentil tortillas before, but the addition of quinoa & the herbs took them to the next level. Thank you so much for sharing your recipe!

The best think about them is that, IMHO, they are even better than regular flour ones and you won’t even notice quinoa or lentils taste in them 😅🙏

@@zaracooks I like the earthy taste of red lentils. 👌 But I'm not too keen on quinoa, so it'll be a good way to use up the quinoa I do have. Plus flour tortillas store bought are expensive, too salty and not as nutritious as this recipe

I've made these several times with just red lentils and they are great! What heat do you cook them on? I used low/medium, but sometimes it was hard to lift them to flip over. Also, do you ever have to re-spray the pan after the first time?

I too cook these quinoa red lentils flatbreads on low-medium heat (start low to let them take the time to cook through, then go on medium to get a bit of colour). We do largely prefer the taste (don’t taste the lentils at all) and the texture (way more soft and playable) of these compared to the red lentils flatbreads. I usually brush with a fraction of coconut with every flatbread to make sure they won’t stick 🙏

I've also added green to the red and it wasn't as flexible. I've done it this way too and added sea salt, garlic and onion powder. Depends on how you want it to tasted.

Thank you 🙏 Yes, you can make wraps with green lentils but the texture and pliability won’t be the same! Yes, you can freeze them for up to 3 months 🤗

I put the leftovers on a large ziplock bag well sealed in the freezer. Yes they get kind of “tight” but they don’t break. They get back very nice once reheated 🙏

Yes, they freeze very well! I keep mine in a sealed ziplock bag in the freezer for up to 3 months. You need to preheat them before serving though 🙏

How long will the batter keep in the fridge? And what about the ready-made flatbread? I've managed to make loads of batter, and I don't want to put it in the bin just because I cannot eat them in one go.😅

Throwing in the bin should not be an option, please 🙏 You can put them in a well sealed ziplock bag and store in the fridge for up to 1 week or for weeks in the freezer. That’s what I do! They stay great, you just need to warm them up before serving 😇

No precooking is necessary, they will cook in the pan. And, don’t forget, the soaking helps them cook much faster 🙏

The colour will be darker as you may think and the texture will be less flexible and smooth as with red lentils like in here 🙏

It’s rather neutral, I would say. Usually only red tortillas lentil tastes the legume aftertaste and the only quinoa tortillas taste that strong typical quinoa taste but the combination of both ended up really more subtle! You won’t recognize neither typical tastes and it’s really good 🙏

I tried green split peas once, yes you can make a sort of flatbread out of them, but it’s so dense! I didn’t enjoyed the taste or the texture to be honest 🙏

I used yellow split peas but they came out more like pancakes. I put maple syrup on them. They were delicious.

this looks lovely but i wondered if you could clarify please, it says 1/2 cup quinoa is 100g and 1/2 cup lentils is 80g are these the correct weights please? many thanks

Yes, the quantities are correct. I get asked a lot about the weights in gram. So, for my viewers, I also weight in grams the quantities I use in my recipes in standard cups (I have at home) 🙏
