Just bottled my first white wine, using this recipe. After racking, I let it set for about a week and a half and it cleared up beautifully. The taste was awesome, clarity was beautiful and it finished at 13.13%. I'm now hooked. I have a simple mead that has been fermenting for about 4 weeks. Can't wait to see how it turns out. Thanks for the great videos and simple recipes!

Is it low sugar wine?
@GogiRegion2 жыл бұрын
@@randpmagnuson6711 If you want a low sugar wine, use a little bit less sugar or a higher alcohol tolerance yeast to make sure it ferments dry. The recipe in this video creates a very sweet desert wine type thing.

Drank all 4 bottles of this over a 3 day period this weekend turned out pretty good. The wine finished at around 11.29%. I drank like a bottle and a half last night and smoked a few blunts with it, I was truly floating. Made another batch Thursday when I bottled using a wine yeast but about to make some more tonight and going back to the bread yeast in the fear my other batch is going to end up being to dry. Thanks again for sharing your know how.

I was inspired by this video, so I bought some airlocks and a cheap jug of apple juice. I had some redstar bread yeast from a couple years back when I was gonna attempt this but never did. However I got excited hearing people supportive of this way of making wine instead of all the wine snobs saying it's "junk" if not done their way. I was shocked how fast the yeast started to make the air lock bubble which was about 10-15 mins after I pitched it. I however did use some wine nutrients a day after it started to bubble which turned my air lock in to a geyser. Then proceeded to burn through sugar in 4 days including the first. It's still the 4th day and I'm drinking it and I'm shocked just how strong it is. Thanks for the inspiration.

Tonight I decided to combine this recipe with wine tannin, and yeast nutrient. I did it in a 6.5 gallon bucket and ended up adding WAAAYYYYY too much sugar. But thanks to the knowledge I've learned (mostly from this channel) I was able to sanitize a 3 gallon fermenter quickly and add water. My OG went from a ridiculous 1.146 to 1.112. Thank you both so much!

When I brewed from Grape Juice I made my own airlocks. My setup was fermenting in 2-liter pop bottles from store brand pop, which also made sports water bottles with tops with compatible threads. Anyway, the locks were those sports tops with plastic tubing glued in placed onto the pop bottles and the other end went into the water bottles. Simple but it worked.

I made this in a gallon fermentor, with Natures Promise grape juice. sanitized everything with starsan I used a half packet of Ciderhouse yeast that I had left over from my last strawberry apple cider brew. I added 1and 1/2 LBs of sugar, then fermented it for 14 days, (the bubbles stopped around then). I racked it into a gallon pitcher, to degase it, using your alternating stirring method, upon tasting I realized it was pretty dry, I added another 8 ounces of sugar, stirred it good, racked into another gallon fermentor, let it sit for four more days and then cold crashed it. We drank most of it today, two glasses got you snookered. it taste absolutely amazing, “The way you think wine should taste when you’re a kid”. Next time I may only use four ounces of sugar to back sweeten for those who don’t like it so sweet, assuming it tastes the same. But my wife is extremely picky and likes sweeter wine, she absolutely loved it. My next tool to purchase for the process is a hydrometer. Thanks for your videos, it’s a great hobby in these times, when you got time to watch your bubbler, you know, bubble.

20 years ago when I was in high school I tried this in a smaller scale. A 2 liter bottle. I used aquarium tubing from a cork and into another bottle filled with water to allow gas release. My mother finds it and was very angry about it, thinking it was 'pot paraphernalia'. I never was a weed smoker but I remember trying to calm her down saying it was to ferment grape juice- like that was any better at 17 years old.

My original gravity was higher than yours 1.122 and the finished gravity was 1.030 making my abv 12.075. It ended being a semisweet delicious tasting wine. It’s exactly what we wanted. I first put a kilo of sugar in the DJ, I added water and shook it, I added red grape concentrate and more water and shook it again, I did the same as I added the lemon juice, tea tannin, oak shavings and lastly when I pitched the yeast and added water with each addition. The result in both experiments is amazing, you can hear it hissing and it is constantly bubbling because the yeast is so active, its really amazing, thank you both.

I might be a little late (where I am, the lockdown is still going and I'm still brewing) but you can use the plastic bottle that the juice comes in to brew in. Or any plastic bottle/jar that is food safe. Food safe ones don't allow oxygen to get in and hence are safe to brew. Yes, glass is ideal but good safe plastic bottles work really well. (Best ones are bigger soda/coka cola bottles or water gallons). Plus you don't have to sterilize when you brew in the juice bottles because inside it already is a sterile environmental.

My first two children were bottled a couple days ago, time actually got away from me and they were in the gallon jugs for five months, but the red wine has been sampled already and is ABSOLUTELY AMAZING and the simple mead is going to be part of the NYE celebration. Thank you for making this process so easily understandable and I while I still have about three 750ml bottles of Red and Mead, I am looking forward to making this again and also trying some new recipes. I can't share my photos here but I have a "Baby Photo" :D to share eventually

PawPaw got me going, and then I watched your videos and I modified my oriiginal plans to make it with, and used less sugar than PawPaw did, and used an airlock and wine yeast...and so it goes...Both batches worked out well, one was apple, and one was done using Welches' liked them both, but the Welches' was best, even tho it failed to start fermentation for three days...I fixed it by adding a d-47 yeast, which nearly exploded, and then I quit again, so I added about a half cup of water, and then it started bubbling like mad and stayed bubbling until it was done and turned out wonderful. I did have an extremely high gravity at the start, which was why I thought new yeast might fix it, and then added some water...but all fixed and was very good.

I did this recipe with 1/2 gallon juice and 1.25 cups of sugar and the same yeast.... SG is 1.110 after 14 days.. I had a FG of 1.006... its still pretty sweet tasting to me.. but it's worth repeating!
@CitySteadingBrews6 жыл бұрын
Wow, your bread yeast got to 13.6% ABV! Guess that dispels the idea that bread yeast can't get past 7 or 8%!
@honeybadger61276 жыл бұрын
I leave it brewing in my office which usually sits at around 78 degrees and not covered either.. that might have been a factor. It still taste quite sweet.. but the hydrometer does not lie and low carbing as made my taste buds more sensitive to sugars too.

I like the fact that you seem to keep these videos - for lack of better term - unscripted. It's more natural that way. More accessible.

Hey guys, just made a apple wine using the same recipe but used used 1 cinnamon stick about 10 days into the fermentation process and 71b and it went to 14.04abv. Really dry and not much flavor. Kinda reminded us of beer? I back sweetened it and will try it in a week.

I recently (3 days ago) tried a pineapple cider, or, possibly, wine. I have access to 46 ounce containers of pineapple juice. (Just like Capri Sun containers, but 46 ounce.) I got 8 of them, put 4 of them in a 5 gallon carboy, pitched the CHEAPEST ale yeast the local store had, Muntons Ale, at $1.29 Put the cap back on it, shook the snot out of it, and put in 4 more cartons of juice. Also added about 3 pounds of white and brown sugar. Next day, (10 hours later) had a 4 inch Kreusen. The next day, activity was slowing down, so I added 3 more containers. Got up this morning, and looked at the (non responsive) airlock. Added 24 ounces of Maple Syrup, and 30 minutes later, a one inch Kreusen. Cheap yeast, cheap juice, and my kitchen smells wonderful. I may backsweeten with Maple Syrup, Campden tabs, and force carbonate. It's GREAT to have a Kegerator! steve
@CitySteadingBrews6 жыл бұрын
So you used 6 pounds of sugar total for a 5 gallon batch? That might go totally dry rather than end up sweet. Campden tabs won't stop a fermentation. Also, pineapple and maple syrup sounds amazing.
@steveskouson96206 жыл бұрын
Sorry, about 3 pounds total, of sugar. I'm going to get K-sorb. (Potassium Sorbate.) I've already got 24 ounces of Maple, I think I'll backsweeten with more, until it tastes right. Before you say it, I KNOW I need to get a hydrometer. (Funny, when I was working at the brewery in Hawaii, I could predict SG just by tasting the wort. I was within. ,05 almost all the time.) steve
@steveskouson96206 жыл бұрын
OK, poured the fruit and 5 pounds of honey, into the same fermenter, on the "lees." Took about 20 minutes to start. Another 20 minutes, I'm worried I may need a blow-off tube. About 3 pounds of Blackberries, blue berry jam, and another 3 pounds of strawberries, cooked down. The last batch went into a sanitized Pin Lock Cornie. Except THIS Cornie was made by Firestone. Same guys that built the tires on my mother's Pinto. She survived WELL after the car was gone! An hour later, I've got a 4 inch Kreusen cap. Can't wait to see how this turns out. My roommate wanted to try Pineapple vinegar out of the last batch, but I K-sorbed it, plus a few (6) Campden tabs. "Cain't" wait to try this. May throw a couple quarts of Maple Syrup in. (Found a 5 gallon "bottle" of Maple Syrup for $40.) steve

Once the wine is done. What's the next step? Do you just strain it and drink it? And how do you store it? Im not sure if im supposed to put it in the fridge or how to stop it from fermenting more or spoiling.

@CitySteadingBrews5 жыл бұрын
Yeah, you can do that... Paw Paw does. That amount of sugar will go to 14% max, so... yeah, if it's sweet, it's not quite that high ABV.

I just did this with 100% Apple juce and I added 1.984 lb of suger. Estimated abv 16% I exspect 11% to 12% with bread yeast. As I really like sweet hard cider.
@CitySteadingBrews6 жыл бұрын
Not to be a pedant (to quote the microbiologist above), but... that's apple wine, not cider. It's a legal term sorta thing, and I hate labels like that, but anything over 8% we call wine.... apparently. So go enjoy your sweet high alcoholic cider! :)

Was watching this video for the umpteenth time and noticed that you said two and half cups of sugar, then shortly after you start saying two and half pounds of sugar. Which is it, 2.5 cups or 2.5 pounds. I just made a one gallon batch and I ended using 2.5 pounds of sugar! Love the videos by the way, very informative!
@CitySteadingBrews4 жыл бұрын
Two and a half cups. Two and a half lbs would be nigh impossible to ferment with the juice.
@MrWilander883 жыл бұрын
I've made this several times, and it's lovely. Just wanted to know if I can actually blend this juice (Aldi) with real grapes (Crushed) and then ferment the mix instead of only juice? the reason behind this question is to add the mouth feel to the brew from real grapes.
