Hi Catherine, first I'm very impressed with your skills, especially the way you make it looks just like the traditional way. I also lived in Yemen for 5 years when I was a teenager and felt in love with the food that I still try to make Yemeni food 15 years later, lol. Where did you get the bread stone from? When I was in Yemen, the girls didn't rise the dough twice at all.... I don't think they added yeast either. They also stretched it out with that round straw thingy. I really liked how you showed us how to stretch out the dough that way.. I will try to buy a stone plate and do it. I miss malouj so much. JZK sis!

yes I think you could, but I haven't tried myself with a rolling pin so I can't say for sure how it tuns out. Also, if you want to see the traditional way of stretching the dough I think there are some youtube videos which show how to do it with the makhbaza (again, i have seen it done but i don't have one of those around)

hi thanks for your comment, it is the same as a pizza stone, yes. I bought mine on amazon (affiliate link below video) but you can also get it at macy's, target, tjmaxx/marshalls, any cooking store really. :)

made this today and came out delicious - although I could not get the perfectly round shape - Mine were more oval - taste just like the ones I get at Yemen Cafe here in Brooklyn but I thought the salt was a bit too much and will reduce when I make it again

Thanks, I tried the same recipe without yeast and it was nearly perfect-flatter and softer than the first one. Will make a note of in the video. Now if I could only find the same kind of flour - I am told its called burr (بر) which is supposed to be whole wheat. However, its different from the whole wheat flour which is in the supermarket. I know what tool you are talking about to shape the bread - the makhbaza - I don't know where to get it around here though :/

Question do you have to mix the ingredients with a spoon before putting in the mixer with a dough hook or just put all the ingredients into the mixer and mix for 15 minutes?

You could fork the flour (The bread) before taking it to the oven, another style but all thing still the same. Great job!
