i been traveling around the Arab world and would say Yemeni food is great and the best in the gulf area ,and now poplar in Cairo.try it you will never be despointed .

But I don't recommend whole wheat flour (the brown one) for this recipe at all ecause that is different and it will really be harder to stretch it. Plus the traditional way for this bread is just with white flour not whole wheat as far as I know. Thanks for your comment hope this helps

My family was introduce to this bread at Art Cafe in Nyack New York and we fell in love with it. They serve it with eggplant or fresh fruits and honey... I tried today for the first time to make it and used nigella seeds - very nice and we will try to make it again.

in the supermarket (here in the US at least) we have white bread flour and white regular flour. Bread flour is for making rolls, bread, pizza dough, etc. and regular flour is for making cakes, cookies etc. The bread flour is better for this because its a stronger and harder flour, but if you can't find it I think you can still use regular flour (it just might break easier when you stretch it)

The bread stone helps to cook the bread really fast and make it crispy at the same time. I think you can still try it without and it might be okay but take a bit longer - can't say for certain sorry :) Have you seen the khubz al-tawa? It is actually similar to this but it is folded in a thin square shape and cooked on a grill/saj on top of the stove instead of inside. Perhaps you could try that. I hope to post a video of that in sha allah. thanks for your question.

salams sheba, do you have a link for the khubz al-tawa ... is it one of your videos? I cant seem to find it. Here in Malaysia, we have loads of kabsa restaurants, and one of the famous, most delish and cheapest is Saba Restaurant and guess what, its also Yemeni (prob u can guess from the name) ... it has this Maryam bread and it looks like this Malawah Bread, its absolutely delish, soft, crunchy parts, it has layers like your bread.

Hi Katrin, sorry if I misspelled your name. I would like to know if you know how to make a mukhbasa --it is either banana and sabaya with hulba or tamar(date) with sabaya and make them as cajen. It is also a Yemeni food as well. My parents move to Yemen. (Adan) when I was a 3 month old and came from when I was almost 7 yrs. I remember Adan just a bit.

hmm maybe it is the same/similar bread with a different name - different parts of yemen have different names for dishes I noticed - The malawah bread from the restaurant also usually comes much bigger than I made it and it is made in a tanour - since I don't have a tanour that's why it looks different. Is the tomato dish liked a fresh tomato spicy salsa? - this is called zahawig/zahawiq in yemen. the recipe is also on my channel. the khobz al tawa video I haven't made yet but in sha allah soon.

I've had something that looked similar except it looked more layered. And it was a lot more oiler. It the most amazing bread I've ever had!! Sometimes, they'd top it with some syrup or honey.

@@reya720 Not really, Lohoh most likely as its start with the Abyssinians of Ethiopia and was brought to Yemen and Somalia through cultural exchange; but there is no historical evidence that the origin of Lahore or Malawah are Yemeni, it could very well be Somali or Habashi in its roots!
