Just find an asian market close to where you live, there's no way they wouldn't be selling it.

@@Martin-rb4np For some people, Asian markets can be a long ways away. I live in the rural southeastern US and my nearest Asian market is over an hour away from me which makes it unrealistic for me to commonly get stuff like kombu. The best option for me is ordering online.

hmm .. learning new things --> only fry chicken for 3.5 minutes at high temp... then let it rest for another 3 minutes .. have you thought to double fry this, after resting ? I bet it will make more crispy.. - and served hot.

Chef san, is there any recommended way to cook rice in a Japanese way? I live in Korea and there are just so many electric rice cookers but it just does not taste like Japanese rice at all.

Hi Sean!! I suppose it's a matter about what type of rice you use. You might need to use Japanese rice 👀 If you already use Japanese rice, and still can't achieve to what's in your memory, maybe The Japanese rice you had before was cooked in clay pot. It might be tricky to get it right, and you need to buy a clay pot which isn't cheap. But there are some videos in KZbin about how to use it. That's all I can think of at this point. tried it out! was wondering if theres ways to make the breading a little less soggy? after cooking, it wasn't as crispy crispy.

Hi Jackson!! Would you please check the following to find out where the problems were?👀 -What temperature the oil was? (In the beginning, and during cooking) If the temperature was too low, it might end up soggy. -Did your chicken looked brown when you take it out from the oil? If the chicken wasn't brown yet, cooking bit longer can might solve the problem -Did you go generous with the batter and flour mix? If it didn't coat well, you can even double crumb it to make deeper coating. The thicker the coating, the crunchier the chicken will be. Hope this reply helps😉 If you still have problems, please let me know!👍

Hi chef! What ingredient that can replace sake? Because I'm a Muslim. Can't consume any alcoholic beverages. Thanks in advance, chef!

Sake starts out with the same amount of alcohol as wine : around 14%. However, like wine, when you cook with it, the alcohol in sake evaporates off so there is none left in the cooked food. If the alcohol were still there, you could taste it. I have a physical intolerance to alcohol but I can eat cooked food prepared with wine or sake in them. I regularly make marinades containing sake and it’s never been a problem. It is never going to make you intoxicated in any way. (Liqueur chocolates are different as they contain liqueurs which have not been heated.)
