I just made two for dinner (I only had some small tortillas on hand), and OMG! This will 100% be a new staple. I made the first one, but with rosemary oinstead of oregano, and one just with tomato spread, mozzarella and pepperoni. I used the tip with pre heating the oven tray. Came out perfect!

Yes! I like the kroger brand simple truth dairy free mozzarella for a pizza. I like Violife mature cheddar block and their feta for cheese for other kinds of meals. Tortillas I've been getting are the mission organic gluten free tortillas (or any burrito size gluten free tortilla) or siete burrito size cassava flour tortilla.

I usually just get whatever I can find at whatever store I'm at. But since I moved to Houston a few months ago, I have mostly been shopping at Kroger. They sell Mission Gluten-free tortillas as well as the brand Siete in the freezer section (I like the Cassava flour ones by Siete) and a few other random brands. I have tried a few different Mission tortillas - they have so many different gluten-free options which gets a bit confusing .. but I find their organic gluten free tortilla better than their regular gluten free one .. i don't know why it's better.. completely different ingredients. I always get burrito size if they have that size. Hope that helps!

The tortilla pizza actually taste better in my opinion. It's fast, and it's a fun dinner if you have friends over or kids since you can plop all the toppings on the counter and everyone can make their own.
