Chamber Vacs rock! I have a different brand, but it works about the same as this one. I do double bag anything I'm going to sous vide. Failures are really rare, but I've had 1 or 2 and the double bagging saved things. Also, be careful with things like ribs. The bones can puncture the bags.

That is one sharp knife! I'm pretty sure I would not have a left thumb if I tried to use something that sharp.😮

Actually it's safer to use a sharp knife than a dull knife. If you struggle and have to push hard to cut, that's when your knife slips and cuts you instead. I think the healthy respect for a sharp knife helps too. You concentrate harder to keep yourself safe 😊

@@Kimmie_F I do know that, actually. It's just that I have cut myself pretty seriously without actually slipping. I nearly cut the end of my thumb off when using a brand new, extremely sharp knife. I got to moving too quickly with my knife hand, and my thumb didn't pull back fast enough. Without much pressure, that new blade went halfway through the side of my thumb (skin and nail) so fast, it didn't even register as pain until a couple of slices later. I was preparing a leek for soup. I'm now afraid of those knives. It's a full set of Japanese knives that my husband gave me for Christmas. He subsequently purchased a "cut glove," and a set of metal fingertip sleeves. I'm still afraid of using those knives. TMI: I have a mild spatial awareness disorder. I don't always know where my body parts are in relation to objects around me. I'm constantly turning corners too quickly, which rams my shoulder into doorways. I'm the one who always bumps into the coffee table, the footboard of the bed, the corner of the table or counter, etc.
