In this easy mermaid cake tutorial I'll give you a step by step guide. I love the soft colour palette and fairy tale quality of this cake. This beautiful cake is simple to make, but will require a few silicone molds. I purchased my molds on Amazon and at Dragonfly Cake Supply online. Another helpful tool is the Crystal Katana for placing your dragees, purchased on Amazon as well. I'd love to see your mermaid cakes, customized in your favourite colours. Happy Caking!

@@noeliaalbornoz3034 if you’re up to it, you could make it extra tall and place a cake round to separate into two cakes. I would consider making a tall 8”. Then you cut in a grid pattern for smaller pieces. Not small, just not those gigantic pieces we cut at home. 😂

I think the secret for you will be keeping the cake cooler. However, you can’t refrigerate the decorations. Possibly you should apply the decorations shortly before serving on a cold cake. My climate is so cold and dry it’s hard to know.

I used a small paint brush and applied a tiny amount of piping gel to the back of each decoration. You could also use royal icing. I like piping gel because it’s clear. Thank you for watching!

Thank you. I used Renshaw store-bought fondant for this cake since the decorations typically get removed and not eaten anyway.

Absolutely, I used sky blue for the majority of the colour, but I only add colour one toothpick of colour at a time. Never a drop (or it's too bold for my liking). I stop adding colour a little lighter than I want the final product as it darkens over the next hour or so. For the darker bottom shade, I added a hint of teal to the sky blue. After mixing the two blues, I add the smallest amount of black, just too subdue the blues ever so slightly. Just touching it with a toothpick barely dipped in black usually does it. These are all Americolor. Good Luck.

Hi this is beautiful. I’m a novice baker and making this for my daughter in a few days. How did you get the fondant colours so beautifully pastel? Did you use white fondant and colour it? I can get my hands on pre coloured fondants but red, yellow, blue,black and green. They are quite loud. Can I just add white fondant and would that make them more pastel in shade? Or do I need to colour myself with gel colours ??

Hi. It’s important to start with white fondant. Then dip a toothpick in a little colour and add the tiniest amount and mix thoroughly into the fondant. I do it several times to get this pastel shade. Don’t worry about adding too little, worry about adding too much colour. It’s such a small amount I use. When it’s very close to what I want, I stop. The colour will intensify over 24 hours so always stop short of what you want with colour (one or two shades lighter). I hope that helps. I’d love to see you’re finished cake.

Hello! I am going to attempt to make this cake for my daughter's birthday in August. Would you recommend using tylose powder to help the mermaid tails harden? We live in Seattle, our house gets pretty warm in the summer with no AC, so wondering if I should use tylose powder. I read somewhere else that it would be helpful. I plan on using Wilton White Vanilla Decorator Preferred Fondant.

Use vodka or everclear so it evaporates and doesn't melt your fondant.

This is a 6" cake, about 5" tall. The taller it is, the better it looks for this cake.

For the mermaid tail to dry it u mentioned at least 2 days, should it dry it just outside or inside the fridge?

What do you stick the ascent with? And where do you leave them to dry? In the refrigerator or outside? Especially if the place is hot??

Surita Maharaj I attach the accents with piping gel. I dry them on a piece of parchment paper on a pan for 3-4 days at room temperature. They can withstand a warm room just fine. Where I live it’s very dry but if you live in a humid environment it could take a bit longer. Adding tylose powder powder will speed up the dry time. 😊

It should not b/c it is dried and if you use tylose powder and let it dry. She said she makes hers a week in advance so they dry.

I’m sorry I missed your comment. The colours I used were sky blue, soft pink, violet and avocado all by americolor. I only use the smallest amount of colour and let it intensify.

Once you've added the fondant decorations can the cake go back into the fridge or will this affect the fondant?

I do not put the cake back in the fridge with the stand up decorations. The ones on the side of the cake have not had any issues for me in the fridge but I live in a very dry climate.

When setting pieces out for weeks do you keep them on the counter or fridge? And how do you stick them on? With icing or just straight into the buttercream? Do you make your fondant yourself? Any tips for a new person?

Also, I put a little piping gel on the backs of the decorations before applying to the buttercream. I have just started to make my own fondant and I’m still experimenting.

Hi. I place them on a cookie sheet in the rack and after a few hours cover them very loosely with Saran just to protect them from dust. Don’t put them in the fridge. Once they are dry you can store them in an airtight container at room temperature. Thank you

If you take a look at my videos you'll find the instructions for the only buttercream I make. It's so yummy but a bit tricky to learn at first. Swiss meringue.

The idea is awesome! The colors are great! I have a tiny issue though. The surface of the cake would look better if looking like a water surface. But with solid top and shells around the tails, it looks like poor mermaids are buried in the sand:(

For this cake I used Americolor Sky Blue, Avocado, soft pink, lemon yellow, violet and white. I use the smallest amount of color (never squirting directly from the bottle) and keep adding until I finally get the soft pastel color I'm looking for. In addition, once I have obtained the color I like, I take a toothpick dipped in black and just add a Teeny spot and mix well. This softens the colors so they aren't too bright. I always take my time adding color and stop just before it's dark enough, as they darken over the next few hours a little more. I hope this helps.

No, my cake style is always a little “less is more.” Never busy. I try to stay true to that so my customers know what to expect with me. You can always add that if you prefer it. 😊

Hi, Are you referring to the fondant decorations? You can also use white chocolate or candy melts for the molds. The seaweed will still need to be fondant or gum paste.I hope that helps. Thank you for watching.

@@anshishabeer6535 I totally agree, this cake is covered in swiss meringue buttercream. The decorations are just removed at serving. I rarely use fondant either.

This cake will last one week in the fridge or 4 hours on the counter. Technically it will be fine for several more hours, however our food guidelines don't allow for more than 4 hours unrefrigerated. I keep our family cakes at home out all day. I don't put the upright fondant decorations on top in the fridge though, just incase there is too much humidity and they get soft. Thank you for watching.

I just let it air dry on a baking sheet. I put a loose piece of plastic wrap over it to protect from dust, but not tight or it won't dry.

This is a 6" cake, about 5" tall. I add the gel colour very slowly, adding only the tiniest bit off a toothpick at a time. If it's too blue, I'll add the smallest amount of black with a toothpick to tone it down.

Hi, this cake is about 5 1/2 inches tall. I think it looks best on the tall side for adding underwater depth to the appearance. Thank you for asking.

No dowel necessary. If I made it over 6” tall I would use dowels though. 😊
