Easy No Bake - Snickers Rocky Road Traybake | Cupcake Jemma

Caramel, Peanuts and Chocolate! These three elements make up the very recognisable, Snickers Chocoalte bar. We have decided to deconstruct it and make it into a Rocky Road. An easy no bake, fridge cake recipe, that you can go all out on or simplify it to suit your needs.

55g Butter
200g Caster Sugar
60g Evaporated Milk
213g Marshmallow Fluff TM
1⁄2 tsp Vanilla Extract
70g Smooth Peanut Butter
100g Chopped Salted Peanuts
CHEWY CARAMELS
75g Double Cream
1⁄2 tsp Vanilla Extract
1⁄4 tsp Sea Salt
115g Caster Sugar
40g Butter
ROCKY ROAD
340g Dark 54% Chocolate
150g Butter
50g Golden Syrup
100g Peanut Nougat
100g Chewy Caramels
100g Mini Marshmallows (plus extra for top)
50g Rice Krispies
50g Salted Peanuts (plus extra for top)

Hi Jema this Rocky Road and the Biscoff Rocky Recipe on your book needs to be refrigerated? I made the Biscoff version from your book and it was DELICIOUS but at the end it was melted in my fingers :(

It should be kept in the fridge if it's particularly warm where you are - if it's cooler you can keep it at room temp!
