@@SmokinJoesPitBBQ Hey Joe, while your observations on trimming other than North America rings true, for me, it all depends on the “quantity” of fat. My friends and family have all complained when the fat is left on because that first bite is a mouthful of mostly-rendered fat. I do leave it on, but I try and take it down if “I eye it up and feel there’s just more than anybody wants to pick through” on that first bite.

I think it's the way many cultures cook their food. I know Brazilian and Argentinian cooking involves cooking over an open fire and that would render more fat than smoking. I bet if we cooked a brisket over coals, most if not all fat would render...wait, there's a video idea. 😁

Dude I have the Pit Boss Lockhart Platinum Pellet Smoker and it’s amazing!!! Briskets, ribs, whole chickens etc and even CHEESE! Has an upper cabinet and will also dial in at 500° for grilling steaks!

Try my method. It is either w sauce and fireshire suace the fresh cracked black pepper, seasoned salt, and granulated garlic, and granulate onion. It is really good.

Looks great Joe. I've never had great luck with Beef ribs. They always cook down a bunch with hardly any meat left and then they seem to be super fatty. Once I get my Lonestar Pellet smoker in, I'm gonna give this another try though. Thanks!

Great video! I grabbed a box of the pecan pellets from your last video and I agree, they do produce a noticeable difference in the smoke profile and in a great way and dare I say if LSG are out of chips, the pecan pellets would be a great substitute to run whole or even as a blend with other pellet brands for an extra kick of smoke negating a smoke tube. Now the question becomes how will they pair with the LSG chips… I haven’t had a chance to do a cook where I use a blend of the pecan pellets + LSG chips, but I’m inclined to think there’s a genuine concern the smoke profile might actually be more smoke than I want. Never thought I’d ever say that using a pellet smoker, but here we are lol. Be curious to see what your thoughts would be running a similar fuel combo in the LSG and how you think that compares to what your offset smokers produce on splits 🍻

Great vid! I just did these and cooked them for the same time frame as you and at the same temps ... and than let them rest for 2 hours smothered in beef tallow ... the bark was phenomenal but only about 20% of the internal meat wasn't dry ... what did I do wrong? Scratchin my head!

Any pellet will work and smoke more on the LSG. The Smokin' Pecan Pellets just happen to be the pellet that produces the most smoke compared to other brands I've used. 👍

Hey Octavio, if I had a business I'd definitely be using a cabinet smoker from Lone Star. They're big but don't take up too much space, you can cook a ton of food and the food comes out great. I would recommend Smokin Pecan Pellets. 👍

@@SmokinJoesPitBBQ we didn't go fishing on the Alaska trip but the week before that we spent a couple weeks lake fishing. We caught rainbow trout. They were delicious on the kettle with some alder chips. Salmon fishing on the west coast is an amazing experience. I recall you cooking some salmon that your neighbor caught in Alaska. The salmon fishing up here is a blast. Worth the trip.

The fat on top almost completely rendered away. The inside fat rendered really well while the outside fat protected the meat from drying. Looking forward to the brisket video.
