Pumpkin spiced....chili! A fall classic. Enjoy this velvety ground beef chili all winter long.
Ingredients:
1 Pre 85% Ground Beef
1 tbsp. coconut oil
1 large yellow onion, chopped
2 medium carrots, diced
5 cloves garlic, minced
1 28 oz can diced tomatoes
1 14 oz can pumpkin purée
1 14 oz. can cannellini beans
1 14 oz can red kidney beans
1 c. chicken broth
2 tbsp. chili powder
1 tsp. pumpkin pie spice
1 tsp. cumin
1 tsp. sea salt
1/4 tsp. black pepper
Heat large pot or dutch oven over medium-high heat.
Add oil and sauté the onions, stirring occasionally, for about 7 minutes or until the onions start to soften.
Add the garlic and cook an additional 30 seconds or until fragrant.
Add the ground beef. Use a spatula or large spoon to break the beef up as it cooks. Cook until meat is nearly cooked through, about 8-10 minutes.
Add remaining ingredients and stir.
Set heat to low and cook for 1 hour and 30 minutes.
Serve with desired toppings, such as shredded carrots or greek yogurt.
