Paula, I was thinking of you when I made a batch of muffins today. I added about 1/2 cup of dried cranberries, which I first soaked in hot water for 10 minutes, and 1/2 of a very firm banana, cut into small chunks. Your video got me into muffin mode. Thanks for the reminder. Oh yeah, they were very tasty... ;-)

Yes, since you labored long in the coffee shops, please share any other muffin recipes you might have. Also, I am big into fermenting for the obvious health benefits. It takes a bit more planning, but the day before I bake I mix the flour with my homemade kefir or homemade yogurt and let it sit at room temp in a covered bowl for 24 hours. The next morning I simply carry on with the other ingredients. Those who have difficulty with gluten can benefit from this approach. (See the section on "Grains" in "Nourishing Traditions" by Sally Fallon.)

Very nice! Yes I know that book. We talked about in in Nutrition college. I love the overnight ferment. I went through a phase of soaking oats overnight with adding a splash of cider vinegar with the same intention. I’ve never done it with flour though! Definitely going to try that!

Sandor Katz really gets into it in "Wild Fermentation". He got me turned on to the idea of doing it with pancake/waffle batter. So now I ferment everything I do with flour: sourdough bread, pizza dough, waffles, muffins... I sometimes feel I need an intervention, but I am probably too far gone... ;-)

I like baking recipes. I don't eat a lot of sweet things but these look like just the amount of sweetness that I would like. I just happen to have a can of pumpkin in my cupboard.... a year old, but what the heck, I'll give it a try. I'm not a fan of cranberries so I'm going to make mine with raspberries. Think that will work.

Hey Paula. We've been baking all evening last night wearing your special apron ;) we've made 3 different cakes ;) your recipe looks good with the red fruits in it! I'd use real fresh pumpkin for the pumpkin puree. Will let you know what the result will be..hugs

Aw that’s so nice to hear! Yep use fresh if you like. Although it’s worth mentioning that canned pumpkin is usually actually butternut squash 😅 so you can use fresh butternut squash instead of pumpkin and it’ll probably be even better :)

Next time replace the whole wheat flour with whole wheat pastry flour and see what that does for you. It carries the flavor but lowers the density.

could you add flax seed to these and not ruin the texture or recipe overall? I'm thinking the addition of a tablespoon or two of water might be needed if you added ground flax seeds. Not really sure.

Yes you can swap out the eggs for flax eggs. Mix 1 tablespoon of ground flax to 3 tablespoons of water and allow it to sit for 5 mins to gel up. They won’t be exactly the same but it should work pretty well!

No good for the English. Pumpkin in a tin would never sell. It would have been nice to be seen cooked with fresh pumpkin as there are loads thrown away after Halloween by those who have no appreciation of the value of food.

You can definitely use fresh cooked pumpkin too! Just make sure it's not too watery :)

First time here and I’m not going to subscribe, because as a senior, many of us don’t have the time or brain power or ADHD, Dyslexia, etc. to keep CONVERTING Every. Single. Ingredient… If you would be more thoughtful and include US measurements, along with the weights you say YOU prefer, perhaps then you can have more subscribers. AGAIN, just being honest.
