Hi there. I haven’t had a cupcake or sweet treat in over 2 years after going gluten free & vegetarian. I made this the other night & they were such a hit with my 2 kids. I’ve made this recipe many times, and the muffins always turn out perfect and moist. Today I used leftover baked sweet potatoes in about the same amount as the pumpkin. Again, they turned out so delicious.

I tried this recipe and I love it! I made it into a bread oh my gosh! Everybody loves it!!!! Tried other pumpkin muffin/bread recipes, they either were too dry or too oily and some had too much spice and some not enough. This is perfect. Thank you and keep up the good work! Be blessed.

Since it's such a tasty muffin it really doesn't need any toppings to be delicious. I love to sprinkle powdered sugar on top but you can be creative and choose your favorite topping ❤️😋

They can be made either way. I use a Gluten-Free all-purpose flour which can be seen in the video and description. But you can use any kind of flour that you prefer. ❤️🍂🍁 It won't always be mentioned in the title because it limits my videos from being shown on youtube but just know everything I make is always Gluten Free and Dairy Free. The great thing is, I show you how to make it either way so you! 🥰

🥰❤️ thank you!!! I have messed up before definitely! But that was more when I first started baking. Once you learn the basics you really don’t mess up anymore! The biggest ways people mess up is not measuring their flour correctly or just using the wrong oven temp. But recently when I was trying to create the perfect chocolate chip cookie I was really trying to push limits and test a bunch of options and there were 2 batches I had ‘messed up’ I guess you could say! I was trying to push the limits on sugar with one, and flour with the other. The one with too much sugar spread super wide and was very crispy haha and the one with flour was delicious but a SUPER thick cookie 😂

At first I skipped by this video after watching for only a minute. I thought this gal is not for real. She doesn't look or act like a cook. She's a model and this recipe probably won't work. Came back to this recipe as I could not find what I was looking for on KZbin from renowned chefs. This recipe used a whole can of. I mean what can you do with a can of pumpkin after you take a cup out of it? I made these muffins only substituting half the flour with whole wheat. Everything else according to the recipe. I started to skip the 425° being the know-it-all cook that I am 😏 and preheated the oven 400° (I've made lots of muffins). Then I made myself listen to the rest of the video. Lo and behold I learned a new trick. 425° was only for 5 minutes. The most perfectly raised and shaped muffins ever. They are delicious. Possibly the best muffins I've ever had. And I am a real cook, over weight, serious and sometimes ornery 😑

I cut the recipe in half to use up a bit less than a half can of pumpkin puree. They came out great! They took 7 minutes less to bake due to the reduced amount of pumpkin.
