G'day Joe from Perth Western Australia I love my steaks rare or as we jokingly say in Perth "still running around the paddock" Have to say in America you take BBQ to the the very best level. I love videos where a steak is cooked right I used to like my steaks well done which to me is the hardest to do correctly cause Mos of the time people dry them out and leave them super chewy with a pellet smoker it so easy to do and have it be juicy great video

Awesome video & I hope your daughter realizes how lucky she is having a dad like you! I also have a YS640 with the two piece heat deflector shield. I don't have the griddle, but I do have grill grates that I can use on either side; one for grill marks & the other for flat top action. I'm going to have to try this on some Costco rib eyes. I love doing the reverse sear. Love your channel. Merry Christmas!

Love reverse sear but i like it a little more wear and i crank the pellet grill to 450 gets the grill marks on the steaks

The thing about a pellet grill/smoker is, at least with mine, you have to work fast because the temperature drops so fast. The steaks look amazing. I love the reverse sear, and cast iron just makes meat taste better.

A little too done for me, but my wife would love it! It would be nice to see you do that same cook on the flattop! For me nothing better than charcoal and steak! Smoke with some hickory splits, then slide it over the fire for a hard sear over the coals!

I wish you would do a video sometime to talk about various pellets. My beef with pellets is that they seem to be "blends". Blends seem to be a ripoff when you want a pure Hickery or other pure flavor. Could you speak to this in an upcoming video.

Man I was practically shouting at my screen for you to pull them on the initial temp read. Woulda been perfect medium rare on the first two with the carryover. Great method and amazing looking crust, though. Spring's coming and looking forward to doing steaks outside this way.

Just a thought, with meat prices skyrocketing now, you might want to give some attention to recipes using cheap cuts of beef/pork/lamb. Also, I prefer high side of RARE (120-125) for my steaks. Have a great Thanksgiving holiday, Joe! ✌️🙏

I wish you would have used and infrared thermometer gun to see the temp is the iron. I get my skillet to 500 degrees when I do steaks in my pit boss. Get a great sear
