Reverse searing your steak is a great way to cook a thick steak and maximize your desired "doneness" (internal temp) from crust to crust or coast to coast as Matt likes to say. In this vide we are shooting for medium rare and at the end yo will see this steak is medium rare from top to bottom. not just targeted in the middle. If you like your steak cooked to medium, just cook it longer than we showed in this video.
We also put together an amazing tasting compound butter to finish this steak with. Allowing butter to melt over your steak while it rests is a great compliment to a fine cut of beef. Feel free to tweak the compound butter to your taste preference.

Followed the Meat Church pulled pork cook on my Big Green Egg over the Christmas weekend....turned out awesome. (thanks for that Matt!!) Wife now is wanting steak over the New Years weekend. I am from South Africa. Used this method in my Ironwood 650 with some South African Angus rib eyes. Wow! My guests said it was the best steak they ever tasted. One of them was a steak connoisseur!

Matt that was AWESOME! Got a tomahawk and used the Cabelas pellet grill with Sear option. I have struggled with stake for a while on this grill. With your help this was a home run! Thanks!

i use this method almost exclusively for about 10 years now. start with my steak in the pan, in the oven at 220', turn once. when i see that its almost to medium rare, i bring it out and sear on the stovetop. comes out perfect every time..

I followed this recipe on tomahawk along with several regular cut ribeye steaks. They came out fantastic. The compound butter really takes them over the top.

Just did some tomahawks close to this recipe for my wife and I's anniversary, but with a pan sear at the end. Turned out great! Next time I'll fire up the charcoal and finish them like you did, along with the garnishing! Thanks for another great video!

Finally getting around to this, Matt. Just got a whole prime ribeye roast that I'm slicing it up into individual steaks. The wife is getting more Holy Cow at Buc-ee's right now. I'll smoke them over post, then searing on my weber. Making the exact same butter you presented above. Totally excited about it :)

Thank you. Planning on cooking some tomahawks for valentine's Friday. Just got my seasoning in last week gonna try the holy cow. Don't have the garlic herb but will make some to replace not having it. Ill be using my treager. I usually put on smoke setting and smoke them for 45 minutes but never checked the temperature before pulling them off and turning up to 450° thank you for that new advice can't wait for Friday.
