I love the different styles of this food. Not just one style and how to make. There are different ones and you pick em what's your favourite OR! You experiment what you like! But there is one thing they all have in common and what the chef's also agree on this recipe. ABSOLUTELY NO CREAM!!
@ramilnavato99754 жыл бұрын
When we Filipinos introduced to us spaghetti, we reinvent it according to our taste. But the world love it that is why we have "sweet style filipino spaghetti sauce". And then Carbonara came to our Filipino table in late '90s. We also reinvent it again. Italian react to our version of Carbonara in nestle cream. We love culinary from different country like Italy but we put ingredients available in our country.

Its kind of amazing seeing how his style has changed. He used Pancetta, Parmesan, and both Butter and Olive Oil. Both Olive Oil and Butter are not needed in Carbonara. Then a few years later he’s doing it properly. No oil or butter in the pan, or Pasta, and he’s using traditional Guanciale, and Pecorino Romano cheese. It’s really cool seeing a chef’s style change over the years, and Id say this is a prime example

Wow, to say italians are strict about their recipes is an understatement. So much hate over butter, garlic and some pancetta. If you'd see what passes as "carbonara" around the globe. Think of cream, hard boiled eggs and ham. And not everyone can afford guanciale and pecorino so you do it the best way you can with the items you can afford and hope to travel do Italy one day to have the real taste :)
@alessandroripari33796 жыл бұрын
hey people..this is english version of carbonara....nothing to do with italian one.....we don't put additional fats like butter or olive oil....just to say

Jamie Oliver I am not trying to question the expert, but I have never added pasta water, gotta give it a shot. but the real question is: why not a single bit of onion? :o
@YTofficialAnonymous7 жыл бұрын
Vicious to my opinion u use onion and garlic to add flavor to your oil/butter when u cook raw meat/seafood..in the case if you use bacon or salted meat then you might not have to..unless you are like me, adding onion all the time
@tammylaswell75667 жыл бұрын
Vicious , you always add some of the pasta water to your dishes. It marries your pasta to the dish

Looks like we have a lot of world class Carbonara experts in the comments section.....Probably people who dont know how to even make an egg...
@mikeox_is_small9 жыл бұрын
+xxxrazorsharpxxx it's one of the classic italian pastas, of course people will know how to make it, the traditional recipe is on wikipedia. Most of the people are shaming the use of butter not the recipe so get off your high horse, stop making assumptions and get over your pathetic hero worship.

+xxxrazorsharpxxx the thing is that gennaro made a carbonara recipe just one month ago on his channel in which he didnt even use butter. changing the recipe just for the product placement is a bit weird

For real. I don't understand what Gennaro is doing here. Obscene amount of butter. Lots of showmanship but not enough explanation on detail.

Interesting to see all the differences between this version and FoodTube's Antonio Carluccio version (egg yolks + 1 whole egg, vs. whole eggs + 1 yolk, salt vs. no salt, garlic/no garlic, butter/no butter, size and amount of meat, pasta water addition, etc.) They both look excellent, though.

***** Although I have nothing against Italians in general, and I'm aware you guys took food very seriously, but please lighten up will you? Both Gennaro and Jamie took classic Italian cooking and make it accessible for their international viewers, which means sometimes they have to twist up the traditional recipes and make it variable in styles and method of cooking. I live in Indonesia, and I love Italian food because of Jamie, I learned to cook Italian cooking from this channel. So please, before you judge please take a look at the bigger picture first
