Making crepes is a comfort food that I've been practicing since I was in high school. Being 50% Croatian, crepes known as palačinke (pah-lah-CHEEN-keh) have been a normal non-threatening snack I'm used to making. You don't need anything fancy, just a non-stick pan and some wrist-swirling practice. Give it a shot! Even if they end up looking wonky or end up a little think...they still TASTE delicious!

Easy Crepe Recipe (from Alton Brown)
2 large eggs
3/4 cup milk
1/2 cup water
3 tablespoons melted butter
1 cup flour
Oil for brushing the pan
1. Add all the wet ingredients (except the melted butter) to a blender and pulse one or two times. Add the melted butter and pulse once more.
2. Add the flour by heaping spoonful so it doesn't lump and blend for 8-10 seconds. Don't overdo the blending or the crepes will be rubbery. It's okay if there are a few little lumps in the batter, resist the urge to keep blending or whisking the sh*t out of that batter.
4. Put the batter in the fridge to come together. 30 minute minimum. If you rest it overnight and it seems reeeally thick, you can add a touch of water and whisk to thin it out.
5. Heat a non-stick frying pan on medium-medium hot. Be prepared to brush with oil between each crepe.
HOT TIP: Drop a little tester batter onto the oiled pan and if it burns or puffs up into a rippled looking tent shape the pan is way too hot.
6. Oil the pan, pour about 1/4 cup of batter into the centre of the pan while swirling the pan to spread the batter out into a thin circle. If it is a weird shape...that's okay :)
HOT TIP: If the batter slides and crumples up into the corners of your pan while swirling, you added too much oil to the pan.
7. Once the batter stops moving, it is cooking. You have to wait about 45 seconds and the edges will start to peel and look crispy. You can lift the edges with your spatula and peek underneath the crepe to see if it looks super pale or if it's a light golden. Golden = you're golden to flip!
8. Flip DAT SH*T!~ Oh yeah. You pro. As it cooks on the other side you can add toppings if you want them to melt. I like my cheese melty and my sugar all melty too, but you can make a stack of crepes and just build them later.
Cook that crepe for another 30-45 seconds and once it is golden on both sides you're done!
HOT TIPS:
Doing all sweet crepes? Consider adding a 1/4 tsp of vanilla extract or a smaaall squirt of honey/agave to the batter.
Savoury crepes? 1/4 tsp of salt or dried herb of your choice, rosemary is very nice.

To everyone who is insulting Simon in the comment section please remember he is struggling with his depression and anxiety right now and this toxicity towards him is only going to make it worse. Yes they are youtubers who did share their relationship and private lives with us but no one is entitled to this. Insisting they have to tell you because you paid for their memebership package or bought some merch is not emotionally healthy and is showing how little you actually care about them as people. Because at the end of the day they are still just two people who are going to have relationship struggles and this year in general has been a rough one for everyone. We are supposed to be building ladders not tearing someone else's apart.

I feel that if you expect someone to be responsible for your identity, either you have to spend time away from that someone or that someone actually goes and dumps your butt. not everyone is as lucky as simon, some seriously could get dumped because they don't have their own identity at all.

I finally tried this crepe recipe. Turned out fantastic. Used hamburger, onion, mushrooms, spinach, and feta cheese for the filling. Even my girlfriend was impressed. Thanks so much for sharing. Oh n celery

LMAO I was dying at the covid wine tours cause I thought I was the only one who did that. Went for a lovely wine tour in the region of my local hiking trail... my patio... the kitchen... I DIDNT EVEN DRINK BEFORE THE PANDEMIC and now I'm my own goddamn sommelier (highly recommend Bread & Butter pinot noir wine. Not even a huge fan of red but you will love it I promise. Good price point too. Available at your local LCBO)

Poutine!! This American is poutine-curious. Also! I'm a bit of a hobby baker and can offer a couple of tips. Your mom's flour jar is too small for a meaauring cup, but that's ok because it's recommended to spoon flour into the measuring cup and then sweeping the stop with a flat edge. This is so the flour does not become packed in/compacted and you wind up with too much flour in your recipe. Also it's recommended to use a separate measuring cup specifically designed for liquid measuring, because dry measure and liquid measure are different in some bizarre way that I don't understand. I use pyrex measuring cups for liquid. Hope that's helpful and not obnoxious lol. Love seeing you filming again! And I love that you have facilitated learning about 3 different cultures/countries over the years. Hang in there. I have chronic illness too so I won't tell you to feel better. Hang in there and manage your spoons.

Seeing that crepes are calles "palačinke" in Croatian makes me so happy. We call them "Palatschinken" in Austria, whereas the German call them "Pfannkuchen" (literally "pan cakes"). I love detecting similarities between different languages! 😍

Martina! It's good to see you! You probably don't remember this, but when you guys had the grand opening for the coffee shop I was able to talk to you and Simon for a bit. I love crepes! I love just opening the fridge and seeing what flavour profiles I can come up with. I've never done the cinnamon sugar and lemon. that sounds delish. I recommend browning the butter for the crepe batter. It adds a really nice nutty flavour.

Hah, my mom is russian and there this dish calling as blinys. And yes they must be so thin. This is still one of my favorite dishes that make my mom, it can be with anything you want but those recepies that shows Martina is the best. My mother told me that my grandmother made pancakes on the stove, on live fire. They were so thin and delicate that they shone through. The pan was greased with oil, and when the pancake was removed from the pan and ironed on a plate they again generously oiled with butter. For me, the best performance of pancakes is with homemade chocolate (from sour cream, cocoa, sugar, a little butter and banana, diced, cooked in a steam bath). Usually the whole family gathers around and eats them hot. It turns out a conveyor where the one who cooks usually stays the most hungry)) Thank you Martina for this wideo and for Martina's Midnight Munchies! Now I know what I will ask my mom to cook soon! Because mom's bliny are the best that the world has created))

Martina Simon you guys give me life I have a lot of physical health problems and mental health problems so when things get really bad it always helps me a lot to watch your videos because you always make me smile and laugh and I hope you guys are doing OK during all of this bad stuff going on in the world and I just want did you guys to know that you’re amazing and keep doing what you’re doing

yeah, I was wondering about that too. Like, it seems like Martina's living with her mom and Simon's living on his own. I hope that they address this sometime. I feel like it was really teased in the last Simon video. Hope they're alright, even if they're not together. I think it's really hard to work with your SO/spouse/partner on ANYTHING for a prolonged period of time, so maybe youtube took a toll on them. Knew another couple who did youtube together for a really long time, and they both recently split because of it. I just hope they're okay, however they're choosing to live their lives now

It may be that they both agreed to time apart for any number of reasons, and want to *choose* to be together vs feeling obligated -- the way they've talked in podcast would lead me to think it's a possibility (including their therapy). This may just be am experiment and they cannot know the outcome. It's probably an unselfish move on the part of their relationship -- in other words, in a good way, perhaps for mental health reasons, Simon is currently only obligated to himself (same for Martina). It can look like a publicity stunt, but it's likely a lot more than that.

In France we usually make savory crepes with buckwheat flour and their are called "galettes" ! They are my favorite type of crepes :p

I was having a discussion about the word gallette recently with my hsuband! Here on Quebec we almost always use the word to describe harder flat round cookies! I had no idea it referred to buckwheat crepes in France. I have no idea why we changed the meaning in Quebec 🙃 I agree though, they're delicious!

Crepes are my favorite! I make them when I'm particularly stressed or feel like I haven't spent any time for myself. In school I'd make tons of them during finals week and give them to my friends 🥰

It is greatly appreciated. I know things are absolute sh*t right now and posting may not always be what you want to do. I have eds too and WOW, my wrist suddenly believes it’s a fair maiden of the middle ages should i try to pick up anything heaver than, say, a bed pillow or a large box of cereal😑 Edit: i did laugh watching you struggle though, i just couldn’t help but think “that’s me!😂”,

You're not alone. I can't pick up with one hand now and I used to be able to do so..and it sux... I sometimes throw a pity party and kinda berate myself for taking those little things for granted in the past. But I try to stay positive now :)

I've always enjoyed Martina's cooking videos. For me, she managed to make it look more accessible, so now I have more 'confidence' to try it out. So this is what I'm making this weekend, wish me luck LOL. I also was very amused with the combo of cinnamon sugar and lemon juice. Wow, that's different.

I couldn't figure out why Martina looked weird. then I realized!! I am so used to seeing her with pink hair. Martina you look great with blond hair too!! I'm going to have to go back and see when it changed hehee. I love it! And I love you and Simon and everything you have created together. I respect you and love you and thank you for making videos even as your private life is under the microscope. You have space to be yourself. You absolutely do not. I was NOT gifted with the Europen language tongue. Somehow I'm better at Asian pronunciations but Europe just cringes when they hear my rubbish "R" sounds. I CANNOT roll anything 😒😂
