Easy Tasty Sambhar - By Vahchef @ vahrehvah.com

this tasty and easy Sambar is a dish in South Indian and Sri Lankan Tamil cuisines, made of toor dal and veggies,sambar masala. A variant of sambar called pappuchaaru is more common in Andhra Pradesh.

Drum sticks 1 n
Egg plant 2 n
Bottle guard 8 pieces
Carrot 2 n
Curry leaves 6 n
Onion shallot 10 n
Onions 1 n
Salt
Oil
Turmeric
Red chilly 4 n
Mustard seeds 1 ts
Cumin seeds 1 ts
Hing
Fenugreek seeds ¼ ts
Red chilly powder 2 tb
Garlic 4n
Tamarind 1 c
Tomato 3 n
Jaggery 1 tb
Coconut milk ½ c
Sambhar powder 2 tb
Boil the tuvar dal in a pressure cooker until dal is soft.
Heat oil in a pan add red chilly, mustard seeds, cumin seeds, fenugreek seeds, turmeric, red hilly powder, hing, garlic pieces, and add drum sticks, egg plant, bottle guard, carrot, curry leaves, onions, onion shallots, sauté this and add tomatoes, tamarind juice, sambhar powder, jaggery, coconut milk, salt, add water put the lid on till the vegetables are tender.
Add boiled and mashed dal and place the lid and cook for 15 minutes in a slow flame. Add coriander leaves, switch off the flame, and serve this with rice

Tried this easy tasty sambhar today and it is a super duper hit in my home :D These days my husband is on south-indian diet and i was only good at curd rice, dosa & coconut chutney. He was asking to make sambhar bt i was nt confidant so wasnt ready fr a try..yesterday he was checking this sambhar recipe himself so i decided to give it a try. I saw the recipie while he was sleeping and to my delight all the ingredients except drumsticks were available so i decided to cook it today itself. Wokeup a bit early and did all the preprations like cookind daal,soaking tamrind,cutting vegetabls & arranging all the ingredients.But while cooking sambhar he wokeup all by himself which is rare & came to the kitchen to inquire what is smelling so good..and the smile on his face was so childish so cute so heavenlly that all my nervousness vanished. And to watch him having his breakfast (steamed rice, plain dosa & sambhar) was a view. After that he said to pack some sambhar for lunch too which also is rare as he doesnt likes the same food to be repeated twice in a day. A big thank u to vahchef cuz i have seen several sambhar recipes bt yours was effortless,that was why i thought for a try :)

It's amazing how this dish differs in taste in every South Indian states. I like Kerala Sambar the most. Probably because they use less amount of tamarind in it. My wife is from Kerala and she doesn't put coconut in Sambar
