I'm Thai and I cook my fried rice without fish sauce but the fish sauce and chillies (พริกน้ำปลา) will be on the table, Thai will give some dashes of fish sauce over their fried rice before they eat.

Nice videos! I used to live in Chiang Mai a couple of years ago, up towards Rajabhat University. I never got to that Khao Soi restaurant, I'm sure I would have enjoyed it. Seems you might be in the US right now, but I'll look forward to more of your videos :)
