Baklava cheesecake
Basis:
a pack of filo dough
30 g of honey
30 g of butter
Pistachio layer:
100 g of pistachios
30 g of butter
20 g of sugar
Cheesecake:
700 g of cream cheese
150 g of sugar
3 eggs
200 g sour cream
Sugar syrup:
50 g of sugar
100 g of water
5 grams of lemon juice
1. Grease the mold with butter and spread the filo dough, greasing it with butter. Pour honey over every third sheet of dough.
2. Trim the edges of the dough so that it is easy to remove from the mold.
It is better to do it in a ring without a bottom, so that it stretches better.
If you make it in a detachable form, then cut the dough to the very top.
3. Bake at 180*C until golden.
4. Crush the pistachio into crumbs.
Add sugar, butter and mix.
5. Beat cream cheese with sugar until smooth.
6. Add eggs and mix.
7. Add sour cream and mix until smooth.
8. Spread pistachio crumbs on the dough and tamp it down.
9. Pour the creamy layer and bake at 160°C for about 30-40 minutes.
10. Remove from the oven and let it cool.
11. For the syrup, mix all the ingredients and bring to a boil.
12. We impregnate the edges of the dough with sugar syrup.
13. We put it in the refrigerator overnight for infiltration.
14. Remove from the refrigerator, remove from the mold, sprinkle with pistachios and cut.
