For those who cannot eat dairy, this recipe is very similar to my mother's recipe. The dairy milk has successfully been swapped out with almond milk or coconut milk in my family. Coconut milk gives it a subtle improvement in flavor and texture, too.

I’ve always used soy. Pretty neutral flavour, and similar protein and fat amount as cows milk. So soy can work as a great alternative as well!

A while back I took John’s advice and began measuring my flour by weight instead of volume. Out of curiosity, though, I first measured by volume (spooning into measuring cups as usual) then proceeded to weigh it. I ended up with an extra 1/4 cup!

John didn't using the water-soaked baking bands around each cake pan. He used those in a previous video several years ago. On his recommendation, I bought and used those. I also suggest doing a crumb layer first. Put into the refrigerator for about 15 minutes to firmly set the crumb layer. Then add the buttercream to the top and sides. I'm making this soon for the wife. She loves white cake and buttercream. I've been using a box mix for thecake.
