This is the first cake I’ve ever made. It’s also, so far, the only cake I’ve ever made. It started my baking journey which led to baking different breads, jams, pies, cookies, frostings, chocolates, etc. I’ve made this cake at least four times. It is just that good and that perfect. I keep thinking I should try another chocolate cake to compare but I can’t conceptualize a better flavor or texture. This was the perfect bake to begin my baking journey. Thank you John!

For chocolate cakes, think about dusting your pan with cocoa instead of white flour (no white/light streaks on the cake).

Oh for sure! Anytime I'm making anything new. I check to see if John Kanell has done it already. I keep a beautiful cooking binder of all my favorite routine recipes and always write down or scratch off things that I do differently for them. 50% are Johns recipes (thr most of any one source) and I never have to edit or add anything. Latest recipe to add of his was the chicken piccata #chefskiss. The only thing I want to ask is if he has tried unfiltered Apple cider in his recipes that contain chicken broth. It is a must have ingredient for mine and I didnt see if he had mentioned it in his recipes.

I made this for my daughter who requested a chocolate birthday cake. It was a huge hit and everyone said it was the best chocolate cake they ever had. I agree. A total winner along with the chocolate frosting. Great tip on the doneness test too. Do not overbake, be mindful of the carry over heat to finish the job for you. Vey moist and tender crumb. Really great!

I made this cake last night but I baked it in a rectangle cake pan as a sheet cake. I followed the recipe exactly step by step except I used almond extract instead of vanilla, everything else was exactly the same. This is the best most amazing chocolate cake I've ever eaten or baked, it was so good. Thank you so much for the recipes. I have now made your lemon bars, strawberry cheesecake, brownies, Blondies and apple cobbler and every recipe is top notch. My favorite is the Blondies, they are to die for. @@ranasanad9048 I used just a standard rectangle cake pan. The cake just needed additional baking time. I watched it and kept checking the center. I think it took about an hour but it's been awhile so can't remember.

I had been searching everywhere for a true devil's food cake, and this is it! I made it this weekend, along with your french buttercream (flavored with vanilla bean paste), for my birthday cake it it is beyond the best I've ever had. I was a bit intimidated by the frosting at first, but you made it easy and it is absolutely the most luscious frosting. I think this combo would also make amazing cupcakes, but I have to figure out how long to bake them. Thank you for your excellent recipes, and making fancy elements way less intimidating!

Tried this recipe and added my own touch to it - reduced the sugar to almost half in the buttercream since that’s how I like it and added a chocolate ganache layer in the middle. Made it for my husband for his birthday and oh boy did we love it?!! Absolutely loved how dutch and moist the cake is, even when it’s sitting in the fridge. Love love love it. To keep your cake plate clean while frosting, place 4 or 5 two-inch strips of wax paper or parchment under the cake edges. Frost your cake. Remove the strips. Clean plate! Also, interesting that John did not spread a thin crumb layer first. When I make this, I'll do that. Chill for about 5-10 minutes to set the crumb layer, Then, add the final frosting.

I made this yesterday and it was delicious! I used monkfruit and palm sugar, less carbs, and it was fantastic! The frosting was full blast powdered sugar! But i used 4 cups and it was more than enough!

Looks WONDERFUL! To protect your plate while frosting, use a few strips of narrow wax paper or parchment paper just under the cake edges, then slide out to remove when done frosting

So it’s not really that it’s hard, it’s just taking the time to do things correctly to have the best possible results. His recipes are absolute perfection, and you can see how hard he’s worked to make them that way. He definitely knows what he’s doing.

Made this for mother's day with the chocolate buttercream frosting and it was a hit. My son said it tasted store-bought and that was the best compliment of them all. So moist. Made quite a mess swapping the sifted icing sugar and the cream, a billowing cloud of sweet dust wafting from the mixer onto my countertop but it was well worth it. Thanks, John.

Hi John - your online recipe for this (you linked it) says 1 Cup or 120ml milk. It looks from watching you on the video, it should say 1/2 Cup, 120 ml milk. This would make a huge difference to those who use the cup measurements vs the ml.

So I followed the recipe to the gram and it turned out really good! My buttercream was a little thick. Probably could have added more cream. So I don't drink coffee and my husband only drinks espresso so I thought if I diluted the espresso 50/50 it would be like coffee. It was a good fail. It was a chocolate espresso cake that was so moist and that espresso was wonderful. Those that tasted the "mess up" have asked for me to do it again. It was a hit.

That is making my mouth water. I can't wait to make this. Also, thank you so much for keeping the little baking blips (the cocoa powder shooting out of the jar onto the counter) in the final video. In another video you cracked an egg that didn't cooperate and had some smaller bit trying to get in your mixing bowl. I appreciate these because it's so real, and makes me, as a mere mortal, feel so much less of an imposter in the kitchen. lol I can't tell you how often I've asked myself: why can't you perfectly crack an egg like "everyone else." Seriously, until you did that, I legit thought I've been doing it wrong all these years--that there was some secret wrist snap that only "real" bakers and cooks knew. LOL

John, my mother always used cocoa powder to dust the pans with when making a choc cake. That way there wasn't any white residue on the sides of the cakes. Your recipe reminds me of her "midnight" cake she made each of us kids for our birthday every year. She'd make it in a bundt pan with fudge (real fudge candy) for the topping.

Just made it for my brothers birthday and I was so nervous the whole time but everyone loved it. The cake was so moist and decadent. I switched out the buttercream to ermine chocolate frosting because I always find buttercream too sweet. But it worked out! I did give it my own flair by sandwiching some crushed chocolate malteasers and chocolate ganache and it tasted really good in the end.

This is THE BEST chocolate cake recipe. Why? He uses BUTTER AND OIL. Butter will always add much better flavour than just using oil. If you want a delicious, moist, and flavourful cake, go with this one!

I've tried other online recipes of this cake and they were meh. Tried out this one and when it was baking the kitchen smelled like heaven. I didn't make the frosting (I was not up to cleaning my mixer again) and I ended up eating half of the cake. It's so delicious! Thank you!!!

growing up, Mom would bake "chocolate" cake. We weren't allowed to call it Devil's food. Couldn't have deviled eggs or ham either. Now they're all my favorite! 🤗

I made this cake on a 9x13 pan. I also didn't have Dutch cocoa and used Hershey's cocoa. I will admit I was afraid but this hands down was one of the best chocolate cakes I have eaten. I don't like coffee so I just used hot water instead. It was SOO MOIST and flavorful. The cake did not rise over the pan as I was afraid in a 9x13 pan it may of been too much but it was perfect. I cooked it for about 35 min.

that recipe is amazing, I just put dulce de leche as a filling inside and buttercream outside, and turn out so good, also when i pop them out of the oven after 10 min, I put plastic wrap so doesn't dry out while cooling.

It looks like it is a regular metal strainer/colander-nothing fancy. I’m deep 6’ing my sifter and going to use a regular colander myself. 😊

This cake rocked! I left off the frosting and made a homemade fudge instead and had it with ice cream. Delicious!
