Did not see the process of adding the wheat starch to the yam, pl advise on this process

Sharp eyes Joanne! The wheat starch is made into a sticky dough with water at 1:01, then it should be added to the mashed yam along with the butter at 1:21. Add the spices, then mix it all up at 1:31. I hope this helps! I think Sweet Home will eventually make a very very detailed yam ring episode to help people in making yam rings for their family anytime they want.....watch for it in 2021, we have some ideas! Hi, thanks for watching! If you freeze the dough, please make sure it is fully thawed before frying, or it will cool the oil too much. If you will use the dough either on the same day or the next day after it was made, you may refrigerate the dough without freezing.

Hi Joycelyn, You can make the dough in advance, and it freezes well. Make very sure that the dough is fully thawed all the way through before frying. The dough should be close to room temperature all the way through. Frozen dough cools the frying oil and causes poor frying results. Thanks so much for watching our video! Can i use potato or tapioca starch instead of wheat? Or use all purpose flour

Juliet, we have not yet tried any other starches to make yam ring. The gluten in all purpose flour might make the ring more tough and less fluffy. If you try other starches, can you post up your results? Cheers Sweet Home

Siewpeng Koo, we used a wire holder that can be found on Amazon as "Beer can chicken holder" We also used an aluminum single-use dish with a hole cut in the middle with scissors to fit over the rack. Remember to make some vent holes under the ring for the oil to drain back out. Use can lifting tongs to place and remove the wire rack from the oil ,they are a secure fit with the Beer can chicken holder and there is no danger of dropping the ring. Let me know if this is enough to get you going? I'd love to see the results of your yam ring cooking! Cheers!, SWEET HOME

No, it's different and has a thicker consistency. You would be able to find it at any Asian grocery stores.
