This is a green vegetable grown in West African and Central African countries. We cook it with pepper and tomato and onions for soup

I plant them in North America between May and august. I cook it with codfish onions scotch peppers and enjoy with rice or green bananas because, I'm 🇯🇲😊

We've been eating this in the Caribbean for hundreds of years now. We call it callaloo in Jamaica. Yummy steamed.

To separate tender seedlings, take a flattish bowl filled with water and add the clump you want to plant on. Each seedling can be shaken free with no root trauma

What few years? This has been made into curries since even my 80yr old grandma's generation. People collected it from lake edges and sold it because of its high demand even in my mom's generation.

Do you know if this can be grown from clippings? I got some long fresh stems from the grocery store right now. I’m soaking it with water to see if it roots like my Malabar spinach did. I am from the Caribbean too, and we call Malabar spinach callaloo. We don’t eat this plant, but I enjoy eating it in Jamaican meals.

We call this variety Charai Bhaji in Trinidad. Is can be brought by abundles at the market. Strip the leaves for cooking, and stick the stems in potting soil to grow them.

Is this plant a perinnial meaning once planted it comes up every year? I'm asking because I'm wondering if I should plant it in a big pot. I don't want it to take over my yard. I plan to harvest both leaves and seed. Can you help?

It is an annual plant but if seeds scatter then they will grow in the next season wherever they scattered

This is a plant that is used a lot in Mauritian cooking and was effectively a weed that power people could collect to add to their food reason. Now it is a vegetable that the diaspora will happily pay good money to get hold of abroad. It is one of my favourite “weeds” in my UK garden, I just wish that we had a longer growing season for them.

Soak for 12 hours. No need to scar.

I am glad you asked. Just shot a video preparing a side dish with amaranth leaves. Will post in next few weeks. The red amaranth leaves are tastier than the green ones.

Hi..when do u know it is ready to harvest? My amaranthus have large leaves at the top but the lower leaves are small, yet to gorow..but tgey have started flowering at the top..should i take it out or wait for the lower leaves to grow? Should the flowering be allowed?or Does it mean it is time to harvest?

Flowering means that plant is almost at the end of life. If the plant is otherwise healthy, prune it and use the leaves. Depending on the weather more leaves may grow

No, quinoa is from the Amaranth family. LOL Amaranth is a very large family, Amaranthaceae.

What about insects or caterpillars eating them. What can I do to prevent them being eaten by bugs?

That's a tough one. I do not like to spray anything on the leafy vegetables. If it's only one or two plants affected, remove them and cover the planter in fine net. I know it's not a great solution but pesticides are not good either especially on leafy vegetables.
