Nothing says summer like fresh, sweet strawberries! Pair them with the flavor of rich cheesecake and blend it into cold ice cream. This guilt free, low carb, no churn keto version of strawberry cheesecake Ice cream will hit the spot on a hot summer day!

Ingredients:
Strawberries - 8 oz, chopped
Allulose (or sweetener of choice) - 1 1/2 Tbsp
Unflavored Vodka - 1 Tbsp (optional)
Cream Cheese - 8 oz, at room temperature
Keto Sweetened Condensed Milk - 1 3/4 cup (Recipe: • Keto Sweetened Condens... )
Lemon Juice - 1 tsp
Vanilla Extract - 1 tsp
Heavy Whipping Cream - 2 cups
Method:
1. In a skillet on medium heat, cook down Strawberries and Sweetener until saucy. Gently mash strawberries for a chunky/saucy final product.
2. Remove from heat and mix in vodka (if using) and cool in the refrigerator while working on the next steps.
3. In a mixing bowl, blend together softened Cream Cheese, Keto Sweetened Condensed Milk, Lemon Juice & Vanilla Extract until smooth and fluffy.
4. In a separate mixing bowl, whip Heavy Whipping Cream until stiff peaks form.
5. Combine whipped cream into cream cheese mixture gradually by gently folding it in.
6. Place dollops of cooled strawberries on the mixture and gently fold them in, creating swirls of color.
7. Place a sheet of plastic wrap directly on the mixture to prevent ice crystals and freeze for 4 hours.
8. Remove mixture from freezer and gently mix using a hand blender. Do not over mix.
9. Transfer the mixture into a freezer safe container with a tight fitting lid and reapply the plastic wrap over the mixture. Close the lid and freeze for 8 hours or overnight. Alternately, freeze in individual sized containers for easier serving.
10. Keep the ice cream at room temperature for 20-30 minutes for easier scooping. If using individual containers, thaw for 5-8 minutes before serving.
