I made this for the first time yesterday and wow! It's REALLY good! I couldn't find egg yolk powder anywhere except Amazon but it was a large amount and really expensive so I made my own. I hard-boiled a dozen eggs, removed the yolks and dehydrated. them, then made a mess by using my immersion blender to grind them. Note to self - use blender next time! Anyway, I followed the instructions and used the Ninja Creami to process. Thank you for this really good recipe!

I made strawberry ice cream finally. Added 140g puréed strawberry and additional strawberry extract. The rest of the ingredients remained to be the same as in ur recipe. Wow! It came out excellent. Thank u so much for the recipe. Amazing! ❤❤❤

I didn’t have the gum arabic this recipe called for but it turned out just fine. It’s a perfect consistency right out of the freezer. I’ve tried several other recipes that required cooking, they never turned out very well and took a lot more time. The use of powdered egg makes this recipe so easy, if you can run a blender you can make this recipe.

I never thought to put parchment paper over the top when I filled those cups with my yogurt. I always tasted the silicone in my yogurt and bought glass jars for my yogurt instead. I'm sure the parchment paper will help prevent that silicone taste I get. Thanks for that idea.

for my mayo, ice creams, puddings & custards I put beaten eggs in pan & heat gently, stirring often to 160° & they are fully pasturized & ready for what ever You want. Just add ingredients to blender to make sure they are all smooth :-)

Yes, you’ll have to temper it and make a custard first. I created this no cook version for convenience and simplicity. The process is a lot easier and faster without cooking.

If I wanted to make a dairy-free version of this ice cream, could I use full fat canned coconut milk with guar gum already in it as a substitute to the heavy cream? I have xanthan gum, and glucomannan flour at home. Are theses acceptable gum arabic and guar gum?

You can, but coconut milk won’t whip up like heavy whipping cream. Unless you buy coconut whipping cream. Yes, there’s such a thing! I will make a dairy free version soon after a couple of flavours and the cone recipe. Gum Arabic and guar gum is compliant for keto. Please watch my riceless paper video for some info on it. It didn’t freeze at all in the freezer? 🤔 This recipe is best for no churn. For Ninja creami, I would suggest just doing the respin cycle. Or spin to rid of ice crystals (if any) then freeze for another 2 hours. I will update my written recipe.

Gluten free does not mean it’s keto friendly. Using Bob Mill’s gluten free egg replacer as an example: the ingredients are potato starch, tapioca flour, baking soda, and psyllium husk. I will not replace the egg powder.

In my 10 years of eating keto , I did try high fat version, no calories counting keto and just got fat. It’s when I adjusted my keto implementation… keeping my carbs low enough to be in ketosis but also watching my calorie intake, is when I found success. But each to their own.

Black tie kitchen uses locust bean gum. I read that taragum is possible to be substituted by that or guar gum. Please look at the mentioned channel on YT

Woww~ I finally got around to trying this recipe and it passed the bf test (he's the one with the sweet tooth) We've tried practically ALL the ice Creams and its variations (ie sandwiches, bars, pints) available in the US market, and this by far has been the best right out of the freezer option (bf is impatient) in terms of flavor and texture. Can't wait to experiment with different flavors~ Oh and reminder to pull the parchment off before digging in if you don't want a mouthful of parchment... so I've been told...
