Hi justin, pdx is a gem and this food looks amazing. I know a good wine nurse when I see one! I've started watching your videos lately and they are great. I was wondering if you had heard of the Hinoki gyuto? It's wicked cool although unfortunately out of my price range. I was wondering if you had suggestions for sub 250 dollar knives. My cooking career has picked up recently and so have the demands for quality equipment. Thank you so much for your informative videos!
