Mud crab is the best. When I was a Chinese cook in a country town in Australia, the locals used to bring the restaurant owner crates of live mud crabs. Funny thing, we ate them and they didn't ever go on the menu. We used to cook them with a black bean sauce. 😊😊

One thing Ive noticed in a lot of videos, the more poor/cheap a country, people, or food is considered, the longer the time they use to cook and prepare their food. The more luxurious or high priced the food and style of cooking, the less emphasis they put on cooking. Damn near a good chunk of the food will be raw.
